These are perfect and simple to make. I melted chocolate mints and dipped the cookies for extra mint chocolate goodness, let them set up on wax paper. Do yourself a favor and eat one while they're still a little melty. Delicious!!

Coconut Macaroons III

Awesome! The easiest macaroons I've ever made. I followed some other suggestions and went with 1 tsp. almond extract and 1 tsp. vanilla. It gave them a wonderful, almost amaretto flavor. So good!

Amy's Lavender Lemonade

This was great! We served it at our wedding reception, and although people were wary about it at first ("I didn't know you could eat lavender!") it was thr first thing we ran out of. And easy to make. I infused water with lavender using my coffee machine, just make sure you clean it first.

Maine Lobster Lasagna

This was really, REALLY good. I used crab instead of lobster, and made alfredo from scratch, and it came out perfectly. It makes a big batch, though. Mine kind of overflowed in the oven!
