Twice-Baked Mashed Potatoes

What a wonderful diversion for the plain old mashed potatoes. Served these at Thanksgiving and they were a big hit.

Bacon Wrapped Smokies

Excellent and so easy. As suggested by others, I did line my baking sheet with foil. Also increased the temp to 350 degrees for final 15 minutes. Kept warm in a slow cooker adding maple syrup for moisture. This was a big hit at a pot luck I went to today!

Summer Penne Pasta

Very good! I did add 1/2 tsp oregano, 1/2 tsp basil, and 1 tsp italian seasoing. I also added 1/2 cup white wine at the same time as the tomatoes and let it warm just a couple of minutes. Will definitely make this again.

Lemon Rosemary Salmon

This was very good but I think it could use a couple more sprigs of rosemary and another lemon. I added lemon pepper, garlic powder, and red pepper flakes. I did wrap in a foil packet as suggested by others and then cooked for 30 minutes. Fish was very moist and flaky!

No-Tomatoes-Required Italian Seasoned Stir Fry

Excellent! I omitted the mushrooms as they are not a favorite of mine. I added an orange bell pepper, and yellow squash as I had both on hand. This was very good and makes great leftovers!

Summer Style Chicken

This was quite good but I did make a few additions as others suggested. I used stewed tomatoes with garlic. I seasoned the chicken with salt, pepper, and italian seasoning. And, finally, I waited to add the cheese until the last 10 minutes. All very good and tasty!

Sauceless Garden Lasagna

Very good! I omitted the feta cheese and increased the mozzarella cheese. Added 1 yellow squash. Didn't have the roma tomatoes on hand so substituted 1 14 oz can diced tomatoes. Next time I will add cheese between the layers.

Shrimp Scampi Bake

This is one of the best and makes it so easy since it is baked in the oven. I did reduce the Dijon-style mustard to 1 tablespoon. Added 1/2 tsp red pepper flakes, and 1/4 cup white wine. This has already become a regular in our home.
