Tuna Noodle Casserole IV
This reminded me of the tuna noodle casserole my mom used to make when I was little. I made a lot of the same changes as other people did. I sauteed some onions and green pepper, which I added to the mix. I also added some frozen mixed veggies when I was boiling the noodles. I only used half the milk, added garlic salt and peppper, and added cheese and italian breadcrumbs into the mix instead of just layering on top.

Enchilada Casserole III
This is a great recipe and easy to modify according to your tastes. Like most other people, I used canned enchilada sauce, but I used green sauce instead of red. Instead of ground beef, I used ground turkey to make it more healthy and cooked up the turkey with diced onions and diced green chiles. It ended up tasting great and the recipe will definitely make it into the rotation.

Spicy Honey-Mustard Chicken Stir-Fry
I thought this stir fry was fantastic. I added mushrooms, snow peas, and water chestnuts to the mix since I like a lot of veggies. My family loved it!
