Fried Corn with Smoked Sausage

This was very good. I gave 4 stars as I think that I will improve on it next time. I got the idea of morphing it into a deconstructed shrimp boil. Next time will add some shrimp and a can of drained diced tomatoes. Perhaps with a little chicken broth and old bay and crusty bread for dipping into the juices. Great recipe to get you started customizing!

BBQ Pork for Sandwiches

Great recipe! I ended up using pork butt and some boneless ribs I found at the last minute. I also ended up straining off most of the liquid and adding in another bottle of sauce to make it thicker in consistency.

Toffee Chocolate Chip Cookies

These are phenomenal. My Mom said they were the best cookies she's ever had. Definitely the best combo of crispy and chewy. I did sub more butter for the shortening and added more chocolate chips than called for and used Heath Bar bits. Definitely a keeper recipe! Thanks Aimee!

Mediterranean Chickpea Salad II

I made significant changes to this to give it some pizazz - hence the 3 stars. I added a diced cumcumber, 1 tablespoon red wine vinegar, 1 tsp dried oregano, and doubled most everything else. It's definitely a good base to start with and then play with your own extras.

Hot Mexican Spinach Dip

Awesome recipe! I give it 4 stars because I did not add any milk to it. I also sprinkled cheddar cheese on top. It got rave reviews. I also think that with some added chicken you'd have an awesome filling for enchiladas!

Cherry Tomato Corn Salad

Salsa De Tomatillo

The best tomatillo salsa I've ever had. We got fresh ingredients from our local farmers market and I believe that makes all the difference. I did add the juice of one small lime for a little bit of kick. Also added just a few drops of hot sauce. This sauce makes great chilaquiles as well as enchiladas. A must try (again and again)! Spicy Blue Cheese Hamburgers

I give this 4 stars as I think the measurements are a bit off. I ended up using about 3-4 Tbs of Texas Pete brand hot sauce and about 2Tbs Worcestershire sauce. I wasn't real sure about it at first...but once we had a finished product it was delicious. I cooked mine in a cast iron pan, would have been real dicey to have grilled them (as mine were about to fall apart). Husband really liked them...will definitely keep playing with the amount of hot sauce and worcestershire to get the right mix. Thanks for sharing!

Guadalupe River Bottom Puddin' Cake

My Mom has made this recipe for years, and I just love it!!! I have to rate it 4 stars because it ALWAYS seems that it takes me three times as long to back the crust as directed. Who knows...could be my crazy oven. But other than that...fabulous and definitely a crowd pleaser!

Cherry Cheese Pie I

This was an awesome and easy dessert!! I showed this to my hubby and he's like, what?!?!? no chocolate!! So I promptly changed it to a oreo chocolate crust and added fresh stawberries and blueberries to the top. I then drizzled chocolate fruit dipping sauce over the top. It was divine!! I love it the traditional way, but this variation will please anyone!! Thanks for sharing, Snowpoet!

Roasted Potato and Garlic Salad

This is a must if you have guests who don't like the typical potato salad. This is tangy and robust and has tons of flavor! I ended up using roasted red peppers from a jar (fresh REALLY expensive and these were great - Vigo brand). I also sliced up a vidalia onion and roasted it along with the potatoes. Everyone loved this and requested the recipe! Thanks for sharing, Holly!

Apple Brownies

Very good, I give it a four because I was concerned that I'd added way too many apples, so I ended up doubling the "batter". It filled a 8x11 pan. The blondies did end up with a more cake-like consistency, but when you drizzle them with a little caramel, they're heavenly! If you like walnuts, do not skip them. They do add a great crunch to the blondie. Thanks for the recipe BakerJim!

Soy Garlic Steak

Spiced Pecans

Great recipe! I have actually modified it a bit after several tries. I use two egg whites and omit the cloves. I also double up, at least, on the cinnamon. Then I stir them every 10 minutes while they are baking. Thanks for sharing your recipe!

Hoagie Bake

Good recipe! I only used one egg and only provolone cheese. It was quite good, used some pasta sauce as a dipping sauce. Already plan on making it again, but using pizza crust this time, as the crescents were a bit too buttery for my taste. Thanks for the recipe!

Hummus III

Good recipe! I actually don't care much for tahini, so I left it out completely. I roasted a head of garlic and added that. FANTASTIC! I even split and cut pita in triangles and sprayed them with olive oil and sprinkled with parmesan cheese and baked them until crispy. A really great snack for a concert on the lawn!
