Slow Cooker Dump and Go Cheesy Chicken

This was good and the chicken shredded with a wooden spoon. I did take the suggestions of others and used 2 cans of cream of chicken and 1 can of the cheddar soup. I added garlic powder and the milk and put frozen broccoli in during the last 30 minutes.

Pretzel Turtles

These were quick and yummy. I took other's suggestions and used the Dove Milk Chocolate caramels and the square pretzels. They were done in no time.

Creamy Spinach Tortellini

This was good, not great. The spinach took over so you couldn't taste much else. I did add quite a bit of garlic, more milk, and extra parm. cheese. I'll probably make again but cut the spinach in half.

Balsamic Roasted Pork Loin

I give it 5 stars for the juiciness. I did take some suggestions and added rosemary and a teaspoon of minced garlic. The flavors were very good. I think the two keys to this dish: use a good quality balsamic (as others have said) and let it marinate overnight.

Easy Slow Cooker French Dip

My husband gave it 5 stars, I give it 4. It got a little dry but the flavor was very good. I did take some suggestions and added minced garlic and black pepper. It paired well with the Crispy Potato Wedges from this site. **UPDATE** I made this a second time and cooked it for 8-9 hours...turned out much better. It's getting added to the rotation to make 1-2x/month.

Marshmallow Treats

There are a couple of "secrets" to making the perfect gooey Rice Krispie Treats: (1) the stovetop is THE way to go (the pan washes out easy w/hot soapy water) (2) you HAVE to melt the butter sloooowly and make sure it doesn't turn brown at all. (3) mix in the marshmallows and melt them just as slowly. If the butter gets brown, the treats will be dry. We double our recipe and it still fits fine into a 13x9 pan (grease the pan w/butter). To make them truly gooey use the following measurements: 11.5 cups Rice Krispies, 1 whole stick of butter, (1) 16oz bag of mini marshmallows. (I always use Jet Puff brand). I've become the neighborhood "treat" maker because the neighbors say theirs never turn out like mine.

Kellogg's® Rice Krispies Treats® Original

Fantastic Black Bean Chili

Simple & Easy & Yummy! This makes a lot more then 6 servings. I did take others suggestions: added a can of corn (drained), added 1 tbsp of cumin, and put it all in a crockpot for 3-4 hours. I also drained the cooked turkey before adding it to the crockpot. We ate it wrapped up in flour tortillas with cheddar cheese and sour cream. **Update** I made this a second time and it was just as yummy but I accidentally put 2 Tbsp of Cumin in....OOPS!! Panicking, I Googled my way to a solution....Nutmeg. I added about 1/2 tsp. and let it keep on cooking. (You could add more if you wanted the cumin flavor tuned down further). This time, I froze the chili in 1/2C portions because that makes 1 burrito and a little on the side for dipping chips into.

Cinnamon-Roasted Almonds

Everytime we're at the mall or a fair, my husband looks for the cart selling roasted almonds. I came across this recipe and decided to give it a shot. He loves them! I did read several reviews beforehand and added some additional cinnamon and baked them about 1 hour and 20 minutes to make them nice and crunchy. Our family enjoyed them at Thanksgiving too....it was a "left-over" they requested along with some turkey.

Banana Bread V

Soooooooooo easy and delicious!! I did take a suggestion and instead of all white sugar, I used 3/4C white sugar and 1/4C brown sugar. I didn't measure the amount of banana, I just used 3 medium size ripe ones. If you live at a higher altitude, no worrries!! I didn't have to change a thing except it was done after about 50 minutes. My friends are still talking about how great this was.

Amish Meatloaf

YUM!! This was my first try at making meatloaf and it turned out great. To those who have said it turns out with too much fat, you have to use a low fat meat. I use 96% lean and it turns out great. I've also used ground buffalo which is extremely lean but you have to adjust the cooking time. Instead of covering the top in sauce, I just put a small layer on top and serve the rest in a bowl at the table.

Broiled Tilapia Parmesan

This was my first attempt at making a fish dish for my family. It turned out great! The topping is a little crumbly but practice will make perfect. My one suggestion is to make sure you cover the fish well with all the topping....where there was no topping, there was not much flavor.

Famous Butter Chicken

My family LOVES this chicken!! My son prefers it when I make it with chicken breast tenderloins because he loves to dip them in bbq sauce. I don't add any salt to it and instead add garlic powder and black pepper to the cracker crumbs. The leftovers reheat very well in the toaster oven too. **UPDATE** To make this a little healthier, I've started using the Smart Balance 50/50 Blend instead of the butter. No one noticed. :O)
