Olive Puffs

I give this a four cause I made some exactly as the recipe stated and some with added cheese and of course the cheese ones turned out much better. They just cook better. I stuffed my own jalapeno olives. The spicy was perfect.

Baked Paprika-Parmesan Chicken

In the words of my husband "It has butter and cheese how wrong can it get?" It was very tasty. I cooked it in our cast iron skillet in the oven for 25 minutes (it was pounded very thin)

Blueberry Crumb Bars

OMG!!!! These are incredible! I substituted 2c of the white flour with 1c whole wheat and 1c Oatmeal. I also sub'd 1/2 the white sugar with half light brown. For the bottom layer I think the trick is to add a bit of water to the bottom mixture (along with Vanilla as per other review) to get a better consistency and avoid it being to crumbly. My Hubby loved it and I will take the rest to my sisters tonight and see how they like. Incredibly easy to make! I will be making these again for sure!!!

Stuffed Peppers with Turkey and Vegetables

Pretty good. Although when we initially baked the green peppers they produced quite a bit of water. We drained them before stuffing them but again a lot of water was produced. I think the water really saturated the flavors so the dish was lacking a bit. I did follow other reviews and sauteed garlic & onion with the turkey. Also added a lot of crushed red pepper.

Cheddar Baked Chicken

Easy, Yummy and solid recipe. I followed the directions to a tee. This recipe gave me an excuse to buy my favorite childhood cereal :)I as well did not melt the pan with butter instead I just sprayed it with non-stick spray. Served with Asparagus and Linquine with red sauce. Next time I will serve with fries or mashed instead of pasta. The pasta added a Italian flair that didn't match the chicken. Thanks Judy for a quick week day meal!!

Chicken and Pasta in a Mango Cream Sauce

Very Strange combination but it works surprisingly well. I used 2 mango's and added cayenne pepper to the chicken and also added 2T of spicy sauce. ( we like Spicy!) I also sub 3/4c milk 1/4c melted butter for the Heavy cream. (googled cream sub and that is what I found)

Chantal's New York Cheesecake

This was my first time baking cheesecake and I was very nervous! I made it for a girls night and everyone thought it was incredible. I did the water bath but still ended up with a small crack-no biggie though. I also made sure not to beat it to much. I used a wooden spoon to gently blend in the eggs. I used low-fat everything and it was just perfect. I also let it cool in the oven for about 5 hours then refrigerated it overnight. Topped with fresh berries.

Avocado Feta Salsa

YUM YUM YUM!!! This was incredible. I made it for a girls night on Friday and it was gone in seconds! I made it again for a family get together Saturday and my family devoured it! The only suggestion I have is to squeeze lime on the avocados so they don't turn brown. You don't taste the lime though. Oh and I also followed the other suggestions of substituting cilantro for oregano/parsley. The feta was perfect but I think feta makes everything betta!

A Pad Thai Worth Making

Good recipe but definitely not like the restaurants. I think it was missing the tamarind like most reviews said. I also miss the peanut taste so at the end I added 2 tablespoons of crunchy peanut butter and I think that helped the dish a lot.

Classic Bran Muffins

Wow this muffins were Perfect! I have been making bran muffins for the last 3 weeks with 3 different recipes and this is hand down the best one by a long shot. I think the buttermilk is really what makes the difference (I used lowfat)Next time I will add chopped walnuts too! Thanks for a fantastic treat!***update*** I have been subbing apple sauce for the oil, use only whole wheat flour, adding 1c flax meal, and reduced the brown sugar to 1/3c. Still fantastic!!!!!!!

Make-Ahead Spinach Manicotti

Very easy and simple recipe. I had 8 people over for dinner (unexpectedly) and it turned out everybody enjoyed it very much. Thank goodness I had made such a big dish for my husband and I that morning. Definitely will make again.

Cashew Chicken Casserole

I thought this dish was pretty strange but when all said and done it was quite good. Don't think I would serve it to company but it was good for a quick weeknight meal. Might make again, the only change I made was using sharp cheddar instead of the processed cheese.
