I work w/an international missions movement and love Asia. I also work with a lot of students from University of Wisconsin and help with an International Student house on the campus. I'm married and we have a baby boy - Samuel, born November 2007. I love to travel, cook, scuba dive, play cards & games, take pictures, design websites (like ours - www.jamesandlinnea.com) and more.

My cooking triumphs
I managed a meal plan for 20-30 students for a year, and came up with all kinds of different recipes. I'd try something from allrecipes.com for the first time and it'd turn out great - always adding my own variations. Also, a salad I made pleased 20 people from all kinds of different nations - it's now one of my favorites to make. Another triumph - we invited over some friends that were in professional food service for many years, including a gourmet bed & breakfast, and our menu impressed them!
My cooking tragedies
I tried to make a Thai soup once that turned out tasting like nothing but fish juice (I only added what it said!)

Garlic Cheese Quick Bread
I doubled the garlic and used 1.5 cups of cheese and could barely taste either. It was dry and crumbly - ok but not great. If you used lots and lots more garlic and lots of cheese, it might make it better. Disappointing because it smelled and looked soooo good coming out of the oven!

Easy Chicken Enchiladas
Awesome! I even made a variation when we had a vegetarian friend over and put black beans instead of the chicken, and it was good! This is my new favorite and I have made it many times now.

Spinach Apple Salad
I absolutely loved this, which served as the base for a salad I made for a large group of people. I did not use Romaine (only spinach) and did not include the onion either. I substituted dried sweetened cranberries for the raisins and added a delicious caramelized almond (just sugar & almonds in a pan, and the sugar melts onto the almonds and caramelizes - I used a 10 or 12 oz package and 1 cup sugar). This was quite possibly one of the best salads I have made and was very popular among people from all over the world.
