Gluten-Free Yellow Cake

Reviewed: May 21, 2009
I was very pleased with the texture of this cake. I made "strawberry" by taking another suggestion and adding strawberry gelatin (just a couple of tsp). I used this for Gluten Free Cake Balls and it turned out excellent! Thanks so much for sharing!

Hot Artichoke and Spinach Dip II

Reviewed: Apr. 24, 2009
Yum! I really enjoyed this. I used fresh spinach, all paremsan cheese, and took another reviewers suggestion to use sour cream instead of mayo and mixed thoroughly instead of adding the layer of cheese on top. This was soooooo good!

Cajun Chicken Pasta

I am a big fan of this one! You can change it up to use just about any pasta you want (Penne, Fettucini, or etc.) I also use all fresh ingredients, esp. garlic (which is always a given in my house) and this recipe is absolutely perfect!

Seven Layer Salad

Reviewed: Apr. 13, 2009
I really like this salad. The dressing is thick, however, you can do the 1/2 mayo and 1/2 sour cream or you can add a little bit of Vinegar (maybe 1/2 tsp) to thin it slighting and add some tang. My MIL makes this salad often and it is also one of my mom's faves as she used to refer to it as "Pea Salad". Very easy and great!

Teriyaki Marinated Chicken

Reviewed: Apr. 4, 2009
This was good, really good! I made kabobs with this, using pineapple and red pepper for the kabobs. I marinated for about 4 hours and it was perfect. I used fresh garlic, about 3 cloves instead of powder and we were so please with the results. A definite keeper!

Everyone loves sausage balls... and they are so easy! I agree with other reviews that you should mix the sausage and baking mix together and then add the cheese. Be sure to use your favorite sausage! Fabulously easy!

Good, but missing something. In my opinion, this recipe needs to be tweaked for optimal flavor; however, provides the basis for a great recipe when tweaked.

Best Chicken Salad Ever I

Reviewed: Mar. 31, 2009
This was really pretty good. I didn't use the relish because hubby doesn't like it. I used Kraft Real Mayo instead of "creamy dressing" (its what I have) and walnuts for the nuts. I used chicken breast, boiled and cubed, and a salted/peppered to taste. I topped the final result with freshly ground Italian Blend and it was really tasty. I guess I changed the recipe up a bit I used the basis (adding the apple, nuts, and raisins, and seasoning the rest to taste as I almost always do) and it was really good! I will make this again!! Thanks for the recipe!

Spicy Grilled Swordfish

Reviewed: Mar. 29, 2009
I don't like to give out bad reviews and even though we like everything in this recipe, neither my husband nor I liked the end result on this. I followed the recipe to a T and it was too much lemon and the flavor was just not good. The lemon really overpowered everything. I felt like I had wasted Swordfish (which is a NO NO). I was VERY disappointed to say the least. We will not be having this again.
