Baked Ziti I

We just finished having this for dinner and it was really good. I made the recipe as stated, only using a bag of shredded Italian Blend instead of mozzarella and freshly shredded Parmesan. I use Kay's Spaghetti and Lasagna Sauce (from the site) and tweak to what I'm in the mood for. The sour cream was good, but I think I like ricotta better. I needed to use up some sour cream anyway so opted to try it this way as written. I'm not sure it was the "best" but it was very good this way! I just changed my rating to 5 stars... I have this all the time now. I did sub the ricotta and actually like sour cream better, so 5 stars and "the best" it is!

Gluten-Free Yellow Cake

I was very pleased with the texture of this cake. I made "strawberry" by taking another suggestion and adding strawberry gelatin (just a couple of tsp). I used this for Gluten Free Cake Balls and it turned out excellent! Thanks so much for sharing!

Hot Artichoke and Spinach Dip II

Yum! I really enjoyed this. I used fresh spinach, all paremsan cheese, and took another reviewers suggestion to use sour cream instead of mayo and mixed thoroughly instead of adding the layer of cheese on top. This was soooooo good!

Baked Potato Soup I

This is third time making this and an updated review... This was yummy! I scaled mine to 3 servings. I made mine Gluten Free by skipping the roux, which eliminated the butter. So I started with 2 cups of milk, then added the potatoes and green onions, seasoned with salt, pepper, and garlic. Next I mixed 1.5 cups of milk with 3 tsp of corn starch and added that to the soup. Turned it up to come to a boil, stirring constantly, then lowered the temp and followed the remained of the recipe. Topped with additional chives, cheese, and bacon and it was yummy! Hubby loved it!

Cajun Chicken Pasta

I am a big fan of this one! You can change it up to use just about any pasta you want (Penne, Fettucini, or etc.) I also use all fresh ingredients, esp. garlic (which is always a given in my house) and this recipe is absolutely perfect!

Seven Layer Salad

I really like this salad. The dressing is thick, however, you can do the 1/2 mayo and 1/2 sour cream or you can add a little bit of Vinegar (maybe 1/2 tsp) to thin it slighting and add some tang. My MIL makes this salad often and it is also one of my mom's faves as she used to refer to it as "Pea Salad". Very easy and great!

I make these a lot. I cut the sugar back to 1/2 and the add additional sugar as need to get the consistency I am looking for. Be sure that your butter is softened and not melted. That is key for the texture!

Teriyaki Marinated Chicken

This was good, really good! I made kabobs with this, using pineapple and red pepper for the kabobs. I marinated for about 4 hours and it was perfect. I used fresh garlic, about 3 cloves instead of powder and we were so please with the results. A definite keeper!

Mini Cheesecakes I

These were so good! Do not overcook them however... I made this recipe exactly as state except for doubling the recipe and topping them with the blueberry mixture from Blueberry Cheesecake Icecream (also from the site and YUM, these were fabulous! Thanks so much for sharing!
