Chickpeas in Tomato Sauce With Feta and Wine

I used 2 fresh tomatoes, some extra garlic and put it over brown rice. DELICIOUS. One of the best finds on this website.

Mostaccioli with Spinach and Feta

Fantastic! I used too little spinach (did 5 oz. by volume, not weight - whoops!), halved the oil but used full-fat feta (due to refrigerator constraints), and a smidge extra garlic. Yummy.

Japanese Tofu Salad

The sauce was absolutely delicious - I mixed it with greens so it was a nice salad and it was a good amount of sauce for that

I made this with sesame seeds and half vegetable oil/half sesame oil, and it came out good as well. I did this because I couldn't find poppy seeds, but I'm sure it would have been even better! The sweet tangy dressing goes perfectly with the swiss and cashews

Vegetable Quesadillas

I skimped on carrots and broccoli, and still had leftover veggies. Also, I doubled the cheese - found it tastier and better glue to hold the quesadilla together when flipping in the oven.

Creamy Mexican Dip

Fantastic! I like mild, so I was satisfied with this as a sort of flavored-sour cream, but spicier things would be good too. A TOTAL hit! Also yes - made QUITE a lot.
