Campbell's® Spicy Salsa Mac 'n' Beef

Pretty bland as written. I added a couple of cloves of garlic, a small onion, and some cumin while the beef was cooking (taco seasoning would probably go well). I also threw in some frozen corn at the end (heating the cheese soup). It could have used another can of cheese soup, but I didn't have any on hand. I topped it with sour cream and cheese.

Texas Black Bean Soup

Super cheap, easy, and delicious. My boyfriend put in a small can of chopped jalapenos instead of the green chilis (by accident), which was a good mistake, since it made it spicy in a good way. I would suggest only using about half a can of jalapenos, though (even if you like spicy stuff).

Salsa Chicken

Super easy and delicious! I put black olives on mine instead of cheese and use fat-free sour cream; my boyfriend skips the sour cream. My little sister reports good results using her Foreman grill, too.

King Ranch Chicken Casserole III

This is almost identical to the recipe I got from family down in Kingsville, TX. The only difference that we make is to cut the tortillas into strips before layering, and we don't use chicken broth--just more cheese.

Different Chicken Cordon Bleu

I halved the recipe since I was cooking for just myself and my boyfriend. I also substituted cream of mushroom soup, chicken flavored stuffing, fat free sour cream, and chicken broth for the wine. I think it's more of a 4 star recipe, but he couldn't get enough of it. Plus, it's very easy, and you only need to wash a few dishes--always a plus! I still found it to be very salty, even after using low sodium soup--I think I'll use way less seasoning on the stuffing next time.

Pumpkin Bread

I can't vouch for this bread tasting better after being frozen, because my bread never lasts long enough to get to the freezer! I am not a pumpkin pie person, but I adore this recipe. It works equally well as an alternative dessert or as breakfast the next day.

Baked Ziti II

As the recipe is written, I would rate it 4 stars--it is easy (my boyfriend, who doesn't cook, said the hardest part was boiling the pasta), tastes better the next day, and is affordable for the amount of food you get (my boyfriend and I ate it for lunch for a week). I think it would be rather bland on its own, so I changed it by adding some Italian Seasoning and I used Garlic Herb chunky spaghetti sauce instead of regular spaghetti sauce, and the extra spices make it 5 stars.

Pirates' Pork Chops

The sweet, tangy sauce was amazing! I left out the raisins and substituted brown sugar for golden syrup. I slightly increased the sauce and put in some frozen broccoli near the end, and even my picky boyfriend loved it.

My boyfriend, who hates bbq sauce, loved this. I am a fan of bbq sauce, and just thought that it was ok--not bad, but not knock your socks off great. I loved how easy this recipe was to prepare.

Marble Squares II

I'm rating my mom's version 5 stars. It differs in three ways: you use 1 1/2 oz unsweetened chocolate squares, which is then melted with the margarine and water. Secondly, you combine all the dry ingredients before you put in the chocolate, sour cream, etc. Finally (and most importantly), you add an egg to the cream cheese mixture, which makes it much thinner and easier to marble the squares.

Orange Pork

Nothing special, but pretty good. I doubled the sauce mixture, and threw in some frozen broccoli while the sauce thickened. My boyfriend hates most veggies, but ate the broccoli, so you can probably get your kids to eat some vegetables this way :)

Pepperoni Burgers

I made this with an extra clove of garlic (we love garlic), the pre-sliced turkey pepperoni you normally put on pizza and 2 tbs of water (as someone else recommended). I warmed up the pepperoni on the stove in a skillet before making the burgers, and then cooked the burgers in the skillet. We both loved the burgers, and found that they were a nice change of pace.

Chicken Alfredo with Fettuccini Noodles

I cooked the chicken with some minced garlic and substituted fat free ricotta and reduced fat parmesan chese. There was a slightly grainy texture, but it wasn't a big deal. There was plenty of sauce, and I was told it heated up well the next day. Overall, it was a wonderfully rich dinner, though if I was making it for someone who didn't love cheese as much as my boyfriend and I, I would likely reduce the amount of ricotta. I will be making it again!
