Semi-retired. Took up cooking as a hobby about 2002. My wife wonders where this passion for cooking was when she was working full time and we had two kids to raise. Favorite cooking shows: America's Test Kitchen and Cook's Country.
My favorite things to cook
I like things that require a lot of prep,(slicing and dicing and measuring,) and that challenge me with the timing of various parts of the meal. I particularly like cooking in a skillet.

Skillet Chicken Picante
Rather than use the tortillas, I served it over basmati rice, with peas. I kicked up the zest factor by using 16 oz. of medium picante sauce and 8 oz. of chipotle salsa.

Amy's Spicy Beans and Rice
Loved it. My wife, who likes "spicy, but not too spicy" said it was "very, very good." If I was just making it for myself, I'd kick it up a notch, but I tend to like very spicy.
