Penne a la Vodka II

I made this vegan style with soymilk and it still came out great (and much healthier)! I also used one (14.5 oz) can of whole peeled tomato and one tomato sauce for a "smoother" sauce. Fresh basil is key, but I've also made it with dry and the sauce still tastes good! I also add about 1/4 cup finely diced white onion when cooking the garlic for an added level of flavor! Yum!

Veggie Pot Pie

I made this vegan style and it came out great! I used flour instead of cornstarch and added a bit of soymilk (<1/4 cup) for the sauce to be a bit creamier. For vegetables I used: garlic, onion, cremini mushrooms, carrots, celery, potato, fresh green beans, canned corn, and frozen peas. I also threw in a some leftover diced tofurkey roast for an added layer of flavor. I bought pre-made dough to cut down on prep-time and pre-cooked the bottom dough layer as others suggested. Yummmy. Heated up great the next day too!

Baked Kale Chips

I'm in shock right now. Shock. So good. They just came out of the oven - they crumble in your mouth and the seasoned salt totally hits the spot for that salty snack craving. I just put more in the oven with a little bit of garlic powder as well. Awesome!

Tofu Parmigiana

This dish was amazing! I followed the advice of other reviewers and pressed the tofu (I did not freeze). I then used flour, egg+milk, and then the seasoned bread-crumb mixture to coat before frying. Excellent! This still had a tofu-taste and texture, but was delicious none-the-less. Meat-eating boyfriend loved it! He made homemade sauce to go with it, so we did not follow that part of the recipe. Will DEFINITELY make again.

Pizza Dough I

This recipe definitely was SUPER easy and had a GREAT taste. I made an olive oil and spice mixture (EVOO, italian spices) that I spread around the crust to help with flavor. However, I wasn't entirely pleased with the consistency. I pre-baked the crust like another reviewer suggested for about 5 minutes, and then topped and cooked the pizza for 20 minutes - and then an additional 10 - and the pizza dough still didn't "cook up" fully and remained doughy and chewy. I'm not sure if I just didn't roll out the dough thin enough, or if it was because I am cooking at a high elevation. I am willing to try this again, cause the taste was good.

Chicken Breasts with Balsamic Vinegar and Garlic

Delicious! I didn't have any mushrooms on-hand so I followed the recipe minus the mushrooms. I did have a red pepper - so I roasted the red pepper and just let the sauce cook down after I removed the chicken. I then added strips of the roasted red pepper to the sauce/glaze - IT WAS GREAT!

Garlic Sauteed Artichokes

I just made this dish - it was wonderful! It was great to try something besides just boiled artichoke dipped in garlic butter. What I did different - steamed the artichoke first with garlic tucked under the leaves and drizzled in lemon juice. Removed choke. I sautéed the garlic in the butter and then removed the garlic (so it wouldn't get too bitter). Sautéed the artichokes and then added chicken broth, water, and lemon juice to steam. Delicious! Thank you!
