Lebanese Chicken and Potatoes

EXCELLENT RECIPE! Could not be any simpler or more delicious. I have tried this with both boneless, skinless chicken thighs, and then a whole cut up chicken. The chicken pieces with skin and bone DEFINITELY work better. Comes out tasting like a moist, flavorful roast chicken with a delicious sauce. We like to have this with the potatoes in the dish, AND white rice on the side to sop up the sauce. (Also good served with pita bread.) Great with broccoli as a side dish to put the lemon sauce on, as well. Thanks for a great recipe!

Iced Pumpkin Cookies

These were yummy--I brought them to work and they were gone in minutes. One this to note-be sure to spread out the dough with your fingers (moisten fingers with a drop of water to spread more easily), or you get big cake-like type balls instead of nice flat cookies. A good recipe, but I think the Pumpkin Cookies with Penuche Frosting recipe from this site is definitely better.

Pignoli Cookies II

I am from Brooklyn and grew up eating these. This is a great recipe and they taste very authentic. I actually cut the recipe in half and used a 7oz tube of almond paste and it worked perfectly! The only thing that you should know is that if you are making these for someone who needs them gluten free, check your almond paste first. Odense almond paste is NOT gluten free!

Bagels II

Very good! I used to work at a bagel store in NJ when I was growing up. These are pretty darn close...especially for being made in a home kitchen! The recipe is great as is...the only thing I noticed was that if you use sesame seeds, as I did, they have a tendency to burn--especially if there's too much oil on your baking sheet. Other than that minor tweak, these were FANTASTIC! I thought these would be much more complicated than they were--a really pleasant surprise. Thank you for a great recipe!

Cream Cheese Frosting II

I tried this recipe because I was looking for a frosting that wasn't too sweet. It was very good and had a nice smooth consistency. It was, however, very heavy on the cream cheese(not a bad thing!) and didn't have that typical fluffy texture one expects in a frosting. Maybe more of the sugar would have helped? I used this to frost a 9x13 cake and there was plenty. I wouldn't however, use this for cupcakes...I think it was a little too soft.

Black Bean And Corn Salad II

This salad is SO good! I added a bit more lime juice, but other than that it was great. I made it for a BBQ and doubled the recipe and it was still fantastic. I made it a few hours in advance and still tasted great. I received many compliments and requests for the recipe! Easy and delicious!!

Playgroup Granola Bars

I made these on a greased jelly roll pan, but just spread into a rectangle (didn't reach the edges), since I wanted them on the thinner side. Added dried cranberries and used oat bran instead of wheat germ. This could not have been easier to make, either. The best granola (or granola bar) recipe I have ever tried!

Oat Bran Muffins

FANTASTIC! Healthful, easy, and delicious! I got about 36 mini muffins out of this batter. I also added cinnamon, vanilla and dried cranberries. I'm going to try it with chopped dried apricots, too. Great with coffee!

Marinade for Steak I

I had high hopes for this one. It definitely wasn't bad, but not as flavorful as I was expecting given the ingredients, such as fresh garlic and onion. I marinated a london broil for 9 hours in this marinade, and it was just "ok". Not terrible, but I probably would try another marinade next time.

Best Big, Fat, Chewy Chocolate Chip Cookie

WOW! Just the right combination of chewy and crispy. And so easy and pretty! I just made these and my husband already had three. I used all brown sugar instead of adding the white, since it was all I had on hand. I also added in some dried cranberries in place of half the chocolate chips. Good, but next time I'll just use 2 cups of chips as the recipe instructs. Simply stated, this is a truly FABULOUS recipe.

Good Old Fashioned Pancakes

VERY easy and so much better than a box! I used oil instead of the melted butter and it turned out fine. I made these into silver dollar pancakes and they were fantastic! I will never use the box again! :-)

Banana Crumb Muffins

I love banana bread, so I was skeptical that this recipe would be as good as a homemade banana bread. I'm glad I was wrong--these were great! I added vanilla and cinnamon to the batter, and took others' advice and added vegetable oil in place of the melted butter. I also had about a 1/2 cup of sour cream left over from another recipe and added that to the batter to give it a coffee cake-like texture. My husband had two in a row right after I made them! These would be great for a brunch or tea...yum!

Pumpkin Cookies with Penuche Frosting

YUMMY! These were more like soft little cakes with a sweet penuche fudge-like frosting/icing. Like eating a miniature cake. I tested the recipe by making some large and some small and they were both great. The only negative is that the icing hardens fairly quickly, so it's better to make all the cookies at once, let them all cool, then make the icing and frost them all. I made the icing a bit too early, but it was fine, as I just re-heated it a little to make it more spreadable. These were a big hit...thanks!!

Dutch Babies II

FANTASTIC! Made in a cast iron skillet and topped with lemon and maple syrup, which ended up being an excellent sweet/tart combination against the dutch baby. This is also super easy...I just wish I could make more than 2 servings at once! :-)

Baked Dijon Salmon

This was mediocre. I had high hopes, but the honey flavor came through stronger than I would have liked. Ended up tasting more like honey mustard than anything else. Wasn't terrible, but for the price, I'd prepare salmon differently next time.

Big Soft Ginger Cookies

I made these with butter and they still stayed soft and moist! I prefer a bit of a crisper cookie, but my family prefers them soft. These were delicious, easy, and kept well. Everyone in my family really enjoyed them! Thanks!

Slow Cooker Barbeque

A huge hit with everyone who tried this! Added a diced onion and used Tony Roma's BBQ sauce. After cooking 8 hours I skimmed off most of the fat, shredded the meat, and added more BBQ sauce. Cooked another hour and it was perfect. Served with sandwich rolls, baked beans, and cole slaw. A fantastic recipe!
