This is a perfect treat served with cream cheese! For the sweetest (best) flavor, your plantains should be completely ripe - skin should be black!

Bread Pudding II

I have been do dissapointed by recipes in the past and this is fabulous and easy! This is my new bread pudding recipe. I had leftover rolls and made 2 batches: one with raisins and one with chocolate chips. They're both already half gone!

Easy Apple Coffee Cake

Absolutely amazing! Adding to my regular rotation! I made twice...first time followed recipe exactly substituting butter cake mix for yellow. Second time I ommitted walnuts and mixed apples with cin/sugar before layering all in the center. Reason for 4 stars is that both times the cakes were structurally a mess. 2nd time was much better. Made sure not to overmix batter as pudding starts to set which leaves space in the cake as apples start to cook down, Overall amazingly simple and out of this world flavor. Will continue to play with until I get the structure just right!

Marie's Easy Slow Cooker Pot Roast

Exactly what you think of when you think of pot roast. Just perfect! I lightly floured mine and then browned it - this way it made its own gravy; no need to thicken the juices.

Poblano Chile Enchiladas a la Gringa

Awesome, awesome, awesome! Used flour tortillas instead and baked in the oven for 30 minutes! Doesn't really matter what you do - its all in the sauce which is rich, buttery and FABULOUS!

Uncooked Banana Pudding

Not only is this dish requested at EVERY family function but my friends often ask for it as their birthday and/or holiday gift. I sometimes substitute "100-calorie" Lorna Doones and if on hand, use French Vanilla creamer in place of 1/2 of the milk called for.

Super Duper Chocolate Cookies
