Awesome Baked Sea Scallops

Definitley half the topping. It is delicious but the topping can overpower the taste of the scallops. Also, don't use as much butter or olive oil. You won't miss it.

Easiest Eggplant

Took a very long time to cook. Otherwise, it tastes good. I was very skeptical about the use of mayo but it was good and you couldn't taste the mayo. I added sauce and mozzarella cheese after browning the eggplant.

Asparagus with Sliced Almonds and Parmesan Cheese

Very good, even family members who don't normally like asparagus went for seconds! A little on the bland side; next time I'll try adding the garlic, as others have suggested.

Spinach and Strawberry Salad

Excellent recipe for a nice summer salad! Everyone loved it! I agree with the previous review, since you have oil in the recipe it will congeal in the fridge if left in for long! I still refridgerated the dressing but didn't leave it in for too long and took it out before serving.

Sangria by the Pros

I subsituted the fruit in the recipe with a pear, an apple, maraschino cherries and an orange. I only let the fruit soak for about four hours but it was still delicious! I served it hanging out with friends in the afternoon and they all loved it. Later that night I went out to dinner at a tapas restaurant with some friends and we got a pitcher of their sangria which was good but nowhere as good as this recipe! This recipe has the potential to be very potent but the drunk fruit is delicious!

Crab Stuffed Mushrooms

Made this recipe as part of a Mother's Day meal. My whole family loved it and my dad requested it as part of his father's day meal. Weeks later he has just reminded me that I have to make it for father's day. I added fresh garlic but otherwise kept the recipe as is. Delicious!
