Braised Collard Greens
Wow, these are the best greens I have ever had, and I am southern-bred so that says something. I mixed a half a cup of these greens and a bit of country sausage with my grits for breakfast this morning. Dee-lish!

Spring Asparagus Salad
This is probably my favorite asparagus dish ever, and I'm something of an asparagus aficionado. It's a perfect side dish for any southeast Asian-style dinner: delicious, quick, and easy. If you leave the spears intact (while trimming off the woody parts of course), it makes for an elegant presentation as well. I've served this several times with the Pork, Apple, and Ginger Stir-fry from this site.

Vegetarian Korma
I have made this several times now, and it's better than the restaurant version. The only reason I'm not giving it 5 stars is because the potatoes and carrots MUST be at least partially boiled beforehand for this recipe to work. Also, it's easy to burn; you need to use really low heat or stir (i.e. flip) the mixture constantly. I prefer using coconut milk--the whole can--to cream. Also I like to add a bit of garam marsala and turmeric.
