Irish Chicken and Dumplings

This recipe is wonderful. Very simple and easy to make with FANTASTIC results. I had a ton of people to feed so I doubled the recipe. I did add a few less veggies than are suggested and more chicken. It was a hit.

Butter Cookies II

These came out perfect exactly how they are. Wonderful with coffee. I dipped them halfway in semi-sweet chocolate and sprinkled them with chopped walnuts. They were VERY pretty and absolutely delicious.

Grandma's Lemon Meringue Pie

I don't personally eat lemon mirangue pie, but I got LOTS of compliments on this recipe. I used my own recipe for the crust and just made the lemon custard and mirangue according to this recipe. It was apparently wonderful.

Mini Cheesecakes II

These were the hit of the party! I used mini muffin tins and made about 55 of these with this recipe. They only needed to bake 10-15 mins and I topped them with canned cherry pie filling. They were wonderful!

Tasted just like Jamaican jerk chicken. When I made mine, I added less habenero than was called for and it was still plenty spicy. I think the full amount would be too much.

Simple Scones

This was one of the best scone recipes that I've ever made. They came out perfectly moist and delicious. I made the Orange Cranberry and Lemon Blueberry variations. I was unable to find dried blueberries, but frozen worked just fine. I also made some Apple Cinnamon ones and a Pumpkin Caramel version. For the pumpkin scones, I used 1/4 cup sour cream and 1/2 cump pumpkin in the 8 serving recipe. After they're baked, drizzle with caramel ice cream topping while still warm. They were great.

Black Chocolate Cake

I'm not sure what I did wrong, but this did not come out. I sifted together the dry ingredients and boiled 2 cups of milk. I melted the shortening in the milk, added it to the dry ingredients, beat in the eggs and added vanilla. The result resembled cookie dough more than cake batter. I wonder if I should have cooled the milk/shortening mixture before adding it. I baked my mess like a cake and the result was lumpy and fell apart. It did taste good though. I decided to try again and mixed the dry ingredients (I used Splenda instead of sugar this time) and then treated it like a boxed mix. I added 1 1/3c water and 1/3c oil. Then I beat in 3 eggs and some vanilla. It baked beautifully in about 30 minutes and was delicious. Tasted very similar to a boxed mix.

Really good, but had a hard time rising. Might want to let the dough rise once BEFORE you make the rolls themselves.

Honey White Loaves

One of the best breads I've ever had. I added 3/4 cup honey instead. I will DEFINATELY make this again. Got wonderful reviews from everyone who tried it. Make sure to use a really good quality honey because you can really taste it.

Cinnamon Raisin Bread I

Overall a very good recipe. I agree that it needs more raisins though. Definately make sure you roll it very tightly or you'll end up with air bubbles in the middle of your swirl. I also added the raisins on top of the cinnamon sugar rather than kneading them into the dough because I thought they might get mashed while I was kneading.
