I love to cook and my favorite way to spend an evening is making dinner with my hubby. I do a lot of entertaining and am always looking for new, interesting recipes.

Anything grilled (especially fruits and veggies), Mexican food, vegetarian recipes, fun desserts, and cocktails!
My favorite family cooking traditions
Making homemade noodles for chicken soup on a cold winter day. Making Mom's Pork Chile Verde on SuperBowl Sunday. Beer can chicken for the boys on a Saturday afternoon.
My cooking triumphs
I entertain a lot and it's always successful. Everytime I pull off another party it's a triumph. :)
My cooking tragedies
I haven't had too many tragedies - mostly they involve dropping food upside down in the oven (clumsy :) ). There was also an incident involing candy called 'fairy food' which i care not to repeat.

Eggplant Parmesan II
This turned out fantastic! Per some of the other reviews, I salted the eggplant slices and let them sit for about 30 minutes. Then I rinsed and dried them really well before breading. Once breaded, I baked them for 10 minutes on each side. Really simple recipe and I will be adding it to my rotation!

Mom's Coleslaw
Really good! I used a bag of coleslaw mix instead of a head of cabbage because I was in a hurry. We served this on BBQ pork sandwiches (using the crockpot BBQ pork recipe on this site) and everyone loved it!

BBQ Pork for Sandwiches
This recipe is perfect! I made it for a party last night and everyone went crazy over it. I used a 4 lb pork roast and Cattleman's original BBQ sauce. Will definitely make again!
