About this Cook
My favorite things to cook
I LOVE making soup! I also enjoy baking.
My favorite family cooking traditions
My mom makes an incredible meat stuffing at Thanksgiving time. My family is Italian...used to love my grandmother's "salt & pepper pizza" along with her wonderful homemade gnocchi. Her pizza was always amazing too with a thin layer of sauce and just a hint of cheese...somewhat like a "tomato pie."
My cooking triumphs
Making great soups.

Creamy Vidalia Onion Soup
Very creamy, decent flavor. Not my favorite but it is a nice recipe. A bit of time goes into preparing this. The jury is still out as to whether or not I would make again.

Zucchini/Potato Soup
I don't quite understand the 5 star ratings on this one. This was pretty bland actually. I ended up trying to improve it by adding cheese, white wine, and a couple other veggies but there is just something about the consistency that is not quite right and I followed the recipe exactly as it is written. Sorry but this one needs work. I will not make again. For a great Zucchini soup recipe, try "Aunt Peg's Chowder" on this site.

Aunt Peg's Chowder
This is my favorite homemade soup of all time. I have made it for a potluck before and everyone asked for the recipe (it does not make a huge amount however so if you will be making it for a potluck I would suggest making a couple of batches.) I make this quite often. It is very easy. It does take quite a while to bake but it is well worth it. I freeze it and bring for lunch and reheat in the microwave. Definitely bake this in a medium casserole dish/bowl. I have never had a problem with the cheese turning "rubbery." In my opinion it is best to follow this recipe exactly as it is written for the best turnout. Thank you for sharing. This will continue to be a staple in my home.
