Delicious Rosemary Bread

I had great success mixing this in my food processor (with the dough blade). Sprinkled the loaves with kosher salt after the egg wash. I pulled one of the loaves out half baked and popped it in the freezer. I finished baking it off a few days later.

Eggplant Bake

Hot Corn Dip

Easy to make and a real crowd pleaser. At the end of baking, I give it a good stir and top it with shredded cheddar. Then I pop it back in the oven until the cheese melts.

Black Bean Salad

Delicious, versatile, and family friendly! My kindergartner loves this packed in her school lunch. I leave the jalapenos out of half the batch for the kids and add cumin.

Jamie's Minestrone

Best minestrone I have ever made. I used vegetable broth to make it vegetarian and used crushed tomatoes instead of tomato sauce. I am getting ready to make it a second time- delicious!

Pizza On The Grill I

I cheated and bought the dough from our local pizzeria. My husband and I each made our own small pies. I messed mine up a bit when I put it on the grill. It ended up a long oval shape. This shape ended up working out great, because once the crust was starting to char, I was able to stick it up on the second grill rack to let the cheese finish melting. My hubbys' was too round to do that, so his did not finish melting. I was amazed how well the grill cooked the dough. I thought for sure there would be gooey spots- but it turned out great!

Portobello Mushroom Burgers

I am one of the few vegetarians I know who despises mushrooms, but I decided to give this one a try. I thought it was phenomenal!!!! I will definitely be making this on a regular basis now. I grilled some big thick rings of red onion to top the burgers- I think that helped tone down the vinegar taste.
