Avocado, Tomato and Mango Salsa

Shrimp Salsa

I could not find shrimp salad to save my life. I called three butcher shops and every grocery store in my area! So... I made this with a crab salad. I'm sure it's different than how it should have tasted, but I thought it was still pretty good!

Crescent Bacon-Cheddar Pinwheels

Realy easy and tasty! I put the rolls back in the fridge for about an hour before cutting them. Next time I'm going to set some ranch out for dipping!

Fusion Hummus

This was a great change to "normal" hummus! After reading reviews I added the balsamic in a little at a time, tasting it as I went so I wouldn't over do it. I also added feta cheese (right into the food processor.) TRY THAT! It's an AWESOME addition!

Asparagus and Cashews

I love asparagus and I love cashews! How could it get any better? This was a super easy recipe that I will make again! My 7 year old even went back for seconds! (I followed the recipe to a "T").

Herbed Greek Roasted Potatoes with Feta Cheese

These were very tasty! I cut the feta cheese in half though - as I thought that was a HUGE amount to begin with. Though these were good, the pan was a pain to clean! The potatoes stuck horribly! Maybe I'll try using that nonstick foil next time?

Heather's Grilled Salmon

I followed the recipe exactly and these turned out GREAT! I marinated the salmon for about an hour and a half and cooked them on the George Foreman grill! So easy and so good! A keeper for sure!

Fish Tacos

I took the suggestion of another user and grilled the fish instead. As they suggested, I marinated the fish in lime juice and sliced fresh jalapenos. I then sprinkled the fillets with chili powder before grilling. These were great! My husband and I HIGHLY enjoyed these!

Broccoli with Garlic Butter and Cashews

Yum-Yum-Yum! I actually followed the directions exactly until I forgot to add the garlic! These still turned out great! I did not feel it was too much sauce, but we like things saucy! Next time, though it was still tasty, I will remember the garlic! LOL! (But seriously - it wasn't missing it at all!) Great easy recipe! I will definitely be making this again!

Cajun Style Baked Sweet Potato

These were FANTASTIC! I cubed the potatoes and also doubled the cayenne. Next time I think I am going to add some red pepper flakes to give them a little more spice. I made these Friday night, and again last night (Tuesday). Super easy side dish you just stick in the oven and forget about till it's time to eat.

Black Bean and Rice Enchiladas

These were fantastic! I made a few changes though. I did use enchilada sauce instead of the picante sauce and salsa. I did not use the cilatro because I forgot to pick it up. These were really yummy! There was a great amount of spice too! I'll be making these again!

Thai Spiced Barbecue Shrimp

Updated - I changed it to 5 stars! We added red pepper flakes and that definitely kicked these up a knotch! We have made these almost every weekend and they are (obviously) quickly becoming a family favorite! Thanks again! These were VERY TASTY and super easy to prepare and make. I didn't give them a 5 because they were not spicy. Next time I make these I will add some cayenne pepper to the mix. GREAT RECIPE FIND! Thanks!

Monterey Jack Salsa

This was really tasty. I am only giving it a 4 instead of a 5 because after it sat over night, the mix of olives and avocado turned the salsa a very unappetizing dark brown/black color. It still tasted great, it just didn't look that good. I doubled this recipe when I made it, and I only used a total of one cup of zesty italian dressing. This was plenty. I may or may not try this again.... We shall see.

Helen's Stuffed Celery

After reading the reviews I made a few changes. I halved the blue cheese (to 4 oz) and I added some extra hot sauce and cayene pepper. I also put the cheese mix back in the fridge for about 30 minutes so it wouldn't be so soft and runny when putting it on the celery. These were pretty good and were a nice change to the normal appetizers I usually make. The cream cheese kind of takes on a weird color, but if you can get past that, they are good.

Vegetarian Tortilla Soup

After reading some reviews I did a little tweaking myself. I added a can of drained and rinsed black beans. This soup was okay. The easiness factor gave it the extra star in my opinion. I made this along side dinner. Now I have lunch for the week as well! The avocados are what brings this soup alive for me - DON'T SKIP THEM!

Rich Mexican Corn

I only used 3 jalapenos because my 6 year old was going to eat this and I didn't want to make it too spicy. Next time I think I'll use 4 or 4 and 1/2 jalapenos because it was quite mild with just the 3. This is tasty corn and a good treat when you can afford the added fat and calories to your meal. (I also used neufchatel cheese instead of cream cheese - still really good!)

Tammy's Tempting Cheese Ball

Super yummy! I am a vegetarian so I am always looking for cheeseball recipes that don't involve meat. I used neufchatel cheese instead of the cream cheese. This is a keeper!
