I added a little more cinnamon- but I agree with others in that this is more of a cake than a bar- maybe cut down on the baking powder

Mrs. Sigg's Fresh Pumpkin Pie

Can't go wrong with a pumpkin pie in the fall, especially one as good as this one. I cooked it in the microwave and then tried blending it with a hand-mixer-didn't work, so I put it in the blender. Perfect!

Easiest Peanut Butter Fudge

Very yummy and rich. Used 1 cup PB, 3 cups confectioners sugar, 2 cups brown sugar. Dipped in melted chocolate for a smoother appearance.

Old-Fashioned Vanilla Pudding

If you make this and decide you like boxed mix better, you must have done something wrong, because this was DELICIOUS! I skipped the egg yoke and microwaved everything but the vanilla about 4 minutes on high, stirring after 1 minute intervals. So much easier than on the stove!

Special Buttercream Frosting

Yum-my. Just like the stuff you get at the store, but not quite as thick. Frosted on David's yellow cake from this site. I recommend this more to cover cakes, not as much for decoration since it is not as stiff

Very moist like boxed cakes, but I love how this doesn't crumble like them. The only difference I made was using 4 whole eggs instead of 8 egg yoke because a.) I didn't want to waste the whites and b.) the whites have protein which give the cake more structure. Frosted with Special Buttercream Frosting from this site. Bottom line- use this instead of boxed mixes, since it's practically as easy.

Chocolate Chocolate Chip Nut Muffins

Dry, bland and stuck to pan even after generous greasing. The only way I saved these was by making a little chocolate frosting to put on top to make them more like cupcakes. I'd skip this recipe

Baked French Toast

This was a nice, light baked french toast- some of them can be so heavy. To make it lighter, I used one less egg, and skim milk (I had no half and half anyway). My parents didn't want the topping (too much butter for them) so I just sprinkled some brown sugar on top.

Jamie's Minestrone

Very tasty minestrone- not as traditional as some I've had, but awesome. I couldn't find spinach at the store, so I added a bag of frozen peas instead, and added mushrooms. I also used 4 cups of chicken stock (skipped water), white instead of red wine, a small can of tomatoes sauce, and one 28 oz can of chopped tomatoes.
