Banana Crepes

We've been using this recipe for years now. It is a wonderful way to use up a few bananas that are getting too ripe. We also serve this crepe recipe with fresh strawberries (though we don't cook those).

Salsa Sausage Quiche

I made this once as the recipe suggests and then modified it the second time around. Both attempts were great! The second time, I added a little milk to the egg, tossed in a handful of chopped spinach and reduced the cheese to 1.5 cups. A complete meal in a single dish! It took forty minutes from start to finish and was delicious for a quick dinner.

Tres Leches (Milk Cake)

My cake turned out great! I have to say that I followed the recommendations of a previous reviewer who said to separate the eggs, mixing the yolks in on time, whipping the egg whites and adding them after the dry ingredients. For some reason, my cake did great with only two-thirds of the milk mixture, so I just tossed the rest out.

Vicki's Hush Puppies

These are supposed to be like the sweet, cake-like hush puppies served at some restaurants, like Captain D's. However, while I reduced the sugar to 1/4 cup, we still found them too sweet and I added a couple of tablespoons of milk to make the batter thinner.

Spanish Rice Bake

This recipe was too sweet and even after adding additional water, the rice didn't cook all the way. We had to add extra spice to make it edible, and then we did eat most of it. I believe that we followed the recipe exactly and had two sets of eyes to make sure that happened.

Amish Friendship Bread I

I thought this was a fine recipe. I'll bet that the previous posters who complained about dry bread, began with a dry starter. Mine had plenty of moisture in it and the bread turned out great! I also sugar coated the bottom of the pan when I baked it.

Curried Coconut Chicken

I love Curried Chicken, but this recipe was a little bland. The first time I made it, it was too tomato-y and thin, so the second time, I used a little tomato paste in place of the tomatoes and sauce. It helped thicken the sauce and flavor it well. The second time I also added more salt and pepper to the sauce which gave it more flavor. Tossing in some cauliflower rounded the recipe well.

Kettle Corn

The main problem with this recipe is that salt is not in the ingredients list. I just used a salt shaker to sprinkle a bit on before serving. Also, it takes practice to keep the sugar from burning. I am used to making popcorn by shaking the pot over a burner, but I still had some trouble with burned sugar. Just watch carefully and read the other reviewer's tips for success. My first attempt was still pretty good, not at all gooey as others reported.

Kolaches II

This was a very easy recipe, but as tasty as the kolaches my mom used to make. I experimented with fillings and decided that this recipe does best with a savory filling. I also tried All Fruit instead of preserves (didn't work out) and cream cheese danish filling (which was delicious).

Pumpkin Chocolate Chip Cookies III

These were tasty cookies, but I didn't like the cake like texture, also noted by previous reviewers. I made twelve cookies before putting chocolate chips in, and those were much tastier than the cookies that had chips. I might use the recipe again, without the chocolate since they remind me of the chewy cookie texture that this recipe lacks.

Banana Oat Muffins

This is my new favorite banana bread recipe. I made one loaf of bread and put the remaining batter into a muffin pan with chocolate chips. Everyone agreed that this is the best banana bread we've ever made. One problem is that the middle did sink in, though it was cooked all the way through. Maybe I'll cook it a little longer next time.

Blueberry Buckle

I have been looking for a recipe like this for years. Just the right moist texture, just the right amount of sweetness. Made with some blueberries that were the "second quality" of this year's picking, they tasted delicious in this easy cake. Warning: While I was stirring the batter, I feared that it was too stiff. However after I spread it in the pan and baked it up it was absolutely perfect!

Blackberry Cobbler

This is the best cobbler I have ever had. My husband is not a blackberry fan but he loved this dish. I cut the pieces almost 1" thick and then only used one stick of butter in the pan and topped it with only 2/3 cup of sugar water. It was rich, tasty and probably a little healthier than the original recipe. We plan to make this again tonight with blueberries instead and again next week for company after we have picked more blackberries.

Brunch Strata

This is an excellent, rich dish to make on occasion. I made a few changes- reduced the cream cheese by half and used chopped frozen spinach in place of the other green veggies. It was a huge hit with my husband and three-year-old (both picky eaters) but my one year old wouldn't touch it (though he usually loves eggs!). Will definitely make again.

Molasses Sugar Cookies II

This is a great spice cookie, even for me though I don't usually appreciate that sort of thing. We didn't have any ginger, so I used pumpkin pie spice in place of all the spices. I also tried to roll and cut these into shapes, but that didn't work out-- the cookies ballooned (my three-year-old though it was magic: the gingerbread men turned into snowmen!) But the cookies tasted great anyway.

Mayonnaise Cake I

This is a good basic recipe, but I made some of the changes recommended by other reviewers and it turned out great. I added a total of 8 tablespoons of cocoa and an additional 1/4 cup of sugar. This made the cake great- not too much or too little. I also reduced the mayo by 1/4 cup as recommended, but I have a feeling this is why the cake turned out a little crumbly. Finally, I baked it in a train shaped cake that probably equaled an 9x13 sheet, and it was a little thinner than I planned but still good. It would be better in a bunt or loaf pan.

Old Fashioned Pound Cake with Raspberry Sauce

This was a good cake in the first 24 hours, but it was excellent the third day. I made two: one in a larger pan and one in a smaller one. The one in the larger pan got too done around the edge but the one in the slightly smaller loaf pan turned out great.
