Banana Crepes
We've been using this recipe for years now. It is a wonderful way to use up a few bananas that are getting too ripe. We also serve this crepe recipe with fresh strawberries (though we don't cook those).

Salsa Sausage Quiche
I made this once as the recipe suggests and then modified it the second time around. Both attempts were great! The second time, I added a little milk to the egg, tossed in a handful of chopped spinach and reduced the cheese to 1.5 cups. A complete meal in a single dish! It took forty minutes from start to finish and was delicious for a quick dinner.

Tres Leches (Milk Cake)
My cake turned out great! I have to say that I followed the recommendations of a previous reviewer who said to separate the eggs, mixing the yolks in on time, whipping the egg whites and adding them after the dry ingredients. For some reason, my cake did great with only two-thirds of the milk mixture, so I just tossed the rest out.
