Chewy Coconut Cookies

Seriously, these are some of the best cookies I have ever had - the perfect balance between sweetness and buttery flavor, crispy edges and chewy centers. They are also ridiculously easy to make. They look beautiful and are perfectly round with minimal effort. I brought them to a party and they were a huge hit. Will make these again and again!

Spicy Chicken Enchiladas

I modified the recipe using the following, which is what I had on hand. These are definitely "Americanized", but that does not immediately equal bad. * 1 package Rice-A-Roni Spanish Rice, cook as directed (ingredients listed below) * 14.5oz can diced tomatoes with green chilies (I used Del Monte diced tomatoes with zesty mild green chilies) * 2 cups water * 1 tablespoon vegetable oil ---- * 1 pound ground turkey * 1 small chopped onion * 1 tablespoon fresh minced garlic * 1 fresh jalapeno pepper, chopped * 10oz can enchilada sauce (I used Old El Paso green chile enchilada sauce) * 2 cups shredded sharp Cheddar cheese * 12 flour tortillas Overall this recipe is good for what it is.

Vintage Lemonade

I reduced the sugar a bit in mine... I like my lemonade *very* tart. Delicious! This is a very simple recipe and very easy to customize as well. Try using lemons and limes, makes a great summer combination!

Beer Biscuits

This is a really great biscuit - simple, with a flavor on its own, without over powering other flavors when served with a meal or soup. I used this as an oven baked casserole topping once... very delicious!

Sausage Gravy I

Very simple and delicious. I used 1lb. turkey sausage, omitted the bacon grease (didn't have any on hand), and replaced it with a tablespoon of water and two tablespoons vegetable oil. Next time I'm going to try this with a little bit of diced onion and maybe some green bell pepper.

Mayonnaise Biscuits

This was on OKAY recipe. I've tried making them twice, and while they are very fluffy, I find them very lacking in flavor. Maybe dill and a little cheese would spice these up, but I don't see myself making them again any time soon.

Old Plantation Rolls

Love these rolls. I make them on a regular basis and freeze large batches. I make large rolls and slice them in half for hamburgers, I make smaller rolls to eat with lunch and soups. A versatile recipe.
