Wings with Mint Leaves and Honey
I forgot to glaze with the juices halfway through cooking, but these still came out great! I cooked for about an hour and 10 minutes. Will make again!

Penne with Pancetta, Tuna, and White Wine
This was good, and a hit with my husband! I added more crushed red pepper, about a cup of wine, went more generous on the olive oil, substituted 2 chopped tomatoes for the cherry tomatoes, canned peas for the frozen peas, 8 oz frozen broccoli for the spinach, and regular bacon for the pancetta. It was surprisingly tasty! Will make again. Thanks for the recipe!

Orange-Glazed Cornish Hens
I scaled this recipe back for 2 servings (i.e. 2 cornish hens) but the cooking time was the same. I didn't have almonds so I used walnuts instead, and I didn't have celery. Even still, this came out great! The chicken was moist and the rice was very flavorful; I used fresh-squeezed oj from the orange I used for the zest. It got the thumbs-up from the husband - I will make this again. Thanks for the recipe!!
