Butternut and Apple Harvest Soup

This soup is simple,elegant and perfect for a cool fall evening. The only thing missing in the recipe as printed is a fair amount of salt. Also, to add depth of flavor and some more savory-ness to the soup, I added about a cup of beef stock. That may help those of you who had trouble with a 'too mellow' flavor.

Sweet and Spicy Marinade for Steak

This is my recipe and I thought you all should know that the key to getting peak flavor in your steak (at least with this marinade) is to pierce the meat with a fork several times. This allows the marinade to seep in and obtain optimal flavor in a shorter period of time. I mentioned that in the original recipe but it got lost somewhere between submittal and posting. Thanks for trying it, though! I appreciate the feedback!

Easy As Chicken Pot Pie

I make a miniature version by placing using biscuits and ramekins so everyone can have the perfect amount of crust (top and bottom!). I peel flaky style Grand's biscuits in half, place 1 half in bottom of each ramekin, bake for 6 minutes, fill with pot pie mixture and top with the other half of the biscuit and bake for 10-12 minutes. This is the perfect pot pie recipe!

Tuna Cheese Mac

I'd give this 5 stars, but of course I changed it a bit. Instead of using cottage cheese, which I generally find to be bitter and difficult to cook with, I substituted an equal amount of cream cheese (This alleviates the "lumpiness" as well). I also added an extra tablespoon of sour cream. I added some chopped, crisp cooked bacon and substituted about half of the regular cheddar with smoked cheddar from the cheese case at the market. It turned it into a special, "gourmet" tuna mac.

Sausage Crescent Rolls

Unbelievable. This is my favorite thing to make for breakfast. I do reduce the cream cheese a bit because it is a tiny bit too much but really, this is the most incredible thing I have made in a long time. I use Jimmy Dean "Seriously Bold" Sage Sausage because the bold, spicy taste works really well with the sweet creaminess of the cream cheese.

Sauce Rosee

This sauce is fabulous. I make it with farfalle and grilled, seasoned chicken breasts when I have guests. I love how fast and flavorful it is. I use dried minced onions and omit the bell peppers because I don't like the texture that they add to such a smooth, creamy sauce. I also use 8 ounces of cream and thicken it a bit with grated fresh parmesean. I strongly suggest using farfalle or rotini so that you get as much sauce as possible on each noodle.

Spaetzle I

I enjoyed the finished product after I fried it and dressed it with browned butter and garlic powder. The dough was a little difficult to work with, but the messiness of it all was fun. I served it with Smothered Pork Chops and Green Bean Bundles of Joy from this site. It was a delish German feast.

Slow Cooker Taco Soup

I used ground turkey and added beef boullion to the mixture to trick my boyfriend into thinking he's eating beef. I only put it on about two hours ago, but it already tastes amazing and I can't wait to eat it for dinner.

Warm Black Bean Dip

Delish! As I disdain the flavor, texture and appearance of sun-dried tomatoes, I substituted a half can of diced tomatoes with garlic and onion (drained). I also was a bit surprised that this was more of a relish than a smooth dip, so I stirred the mixture until the beans were a bit more broken down. One last note: Adding a packet of Goya cilantro and tomato seasoning makes everything Latin taste that much better. :)

Rosemary Ranch Chicken Kabobs

I thought it was a tiny bit bland the first time I made it. I added about 1/4 teaspoon of smoked chipotle pepper seasoning and a pinch of thyme the next time around and marinated it for three hours and it was much improved. It was incredibly tender both times.

Tasty Tuna Pasta

This was great, quick, easy and still good reheated. In other words, everything you want in a weeknight dinner. I did add a good amount of grated parmesean cheese to the jar sauce as I don't like the odd taste in store-bought alfredos, but other than that, I wouldn't change a thing.

Chicken Enchilada Soup III

This is everything you look for in a recipe; easy, quick, delicious and reheatable. It tastes exactly like an enchilada. I added chipotle pepper, halved the cheese, and used barbecue chicken breast I already had cooked from last night, which saved on the time. FOR THE MASA HARINA HATERS: When mixing the masa with the water, whisk a little at a time into your water (about a tablespoon at a time) very quickly, until it is all dissolved. This gives it a much smoother consistency and alleviates the grittiness.

Quick Creamy Potato Soup

Amazing! I did mash the potatoes as I don't care for the consistency of chunky potato soup, but doing this makes it almost identical to my favorite Irish restaurant's potato soup. Of course, the addition of bacon and cheese (I took others' advice and added it as a garnish) made it a little more "American" but you can't go wrong with those two ingredients on anything. This is going into my monthly rotation for sure! Thanks Amanda!

This was rather bland, but with the addition of 1 teaspoon of cumin, 1/2 teaspoon chipotle pepper and four strips of bacon, the flavor was made more southwestern and considerably more flavorful.

Black-Eyed Pea and Bacon Soup

This recipe was perfect for a dreary day. I didn't have enough bacon so I added smoked sausage as well and this turned it into a real meal. I also added 2 cups of carrots, which improved the heartiness.
