Rigatoni With Eggplant, Peppers, and Tomatoes
I made this for two,I used one eggplant, kept the garlic, red pepper and basil the same, as they are ingredients we tend to add extra when cooking anyway. I didn't have fresh tomatoes, so I used one can of diced tomatoes. I also sprinkled some parmesan cheese over the eggplant mixture in the pan.Served over ziti,as it was what I had on hand and I lightly sprinkled some grated parmesan cheese over the tomato sauce mixture. It's a good summer recipe for eggplant and not heavy like eggplant dishes with a lot of cheese.

Penne with Shrimp
Very good, will definitely be serving this again..I combined some other suggestions when preparing. I sauteed the shrimp in butter prior to adding to the sauce. I added a pinch of crushed red pepper and fresh basil.However, I did have to add some dried basil later,as it still needed a little more(dried did the trick, but we do love basil in our house, so you'd have to adjust it to your own preference). I also used petite diced tomatoes.

Peppercorn-Seasoned Steaks with Mustard-Wine Sauce
First time I've been able to use the frying concept to prepare steak with such great results. I didn't have shallots,only had vidalia onions and I also added a minced garlic clove, turned out very tasty. This recipe is a keeper and so much easier to clean up after versus using the broiler or grill.
