The holidays are always a nice time to bring all of the favorite dishes together and to spend time with family.
My cooking triumphs
Preparing an elaborate Thanksgiving dinner for 12 without a hitch. I was 24 at the time and was insistent on making everything myself so it was a monumental feat. Also, baking the moistest, most perfect Italian Cream Cake for my mom's birthday.
My cooking tragedies
Another Thanksgiving. I was taking the dressing out of the oven as most of the family was arriving. With all of the commotion, I forgot to turn the oven off and the pan exploded on the stovetop. All of the women kind of pulled together in the kitchen using anything on hand to make another batch. It was nice to have so many generations together and considering it was such short notice, it was actually some of the best dressing ever. Needless to say, not a year has passed by without my "TNT" dressing being mentioned.

Poblano Chicken Enchilada Casserole
This is restaurant quality!! The only changes I made: omitted the mushrooms and added fajita seasoning to the chicken. I forgot to add the lime juice to the sauce but it still turned out great! I will add it in next time. This recipe is a keeper!!!

Spinach Pasta Salad
Very Good! I have made several times. I prefer Ken's Italian style dressing and I usually add spiced up chicken to make it a meal. I also use kalamata olives instead of black olives. Just make sure they're pitted! Even better the next day after the flavors have all combined.
