Sweet Potato Balls
Delicious. I add cinnamon and nutmeg to the mashed sweet potatoes, which added some additional flavor. Very, very sweet though- nearly a dessert.

Chocolate Meringue Cookies
I made this recipe last night and it was excellent- I was impatient and pulled them out at 25 minutes, so the centers weren't quite done, but they were still delicious and airy and just wonderful. Tonight, using the same implements, ingredients, and technique, they turned out flat as pancakes. Still delicious, but pancakey. The weather is still cool and dry, so I don't think it was that. I guess the moral of the story is that meringue is a fickle dish. C'est la vie.

Best Carrot Cake Ever
This really was the best carrot cake I've ever had. I took the advice of some other reviewers and drained the carrots and pineapple really well, adding about two tablespoons of the pineapple juice back when I mixed the dry and wet ingredients together. I also soaked the raisins in pineapple juice and a little warm water and then drained them before adding them. I left out the walnuts since I had some picky eaters to serve and added a dash of nutmeg. The end result was well, well worth the effort. I made it for a birthday party and while we usually have quite a bit of cake leftover after birthdays at our house, there were arguments over who would get seconds and every slice was gone by the end of the party.
