Oatmeal Baked Chicken
I made this tonight with chicken legs. My oldest son and husband really liked it. I thought it was ok, but legs are not really my fave. That could have been the problem. The outer flavor was good, and everyone liked the crunch. My youngest is picky, so I left his plain. I think I'll try his with little to no spice next time, but still use the oatmeal as a coating. Overall, a good, easy and inexpensive coating for chicken. Much healthier than frying.
The spices were really good (I added 3/4 tsp onion powder). I think they'd make a great rub.
