Beef and Bean Chimichangas

Love them! It's a nice variation to the ol' tacos and burritos. I love that it is not fried too. The only change I made was omitting the corn to make it to my husbands liking and I also cheated a little and used a packet of taco seasoning. These were so easy for my kids to eat (who are 2 and 3 years old) because they didn't fall apart like tacos do when they are handling them!

Beef Crostini Sandwiches

Unfortunately these did not go over too well in our house. I was the only one that liked them, so I probably wont be making them again. I really like the taste the soy sauce added. I added mozarella cheese and toasted the whole thing in the oven instead of broiling it. Be sure to use low sodium soy sauce though.

Coq au Vin alla Italiana

Very tasty!!!! I did not have the italian sausage on hand, so I replaced it with chorizo. I liked the chorizo, but hubby is not a fan of it. Other than that, I followed the recipe as is and served this over potatoes. I also used white meat chicken and had no problems with it drying out. This dish has a lot of taste and I will be making this again and again! Thank you!

Marinade for Steak I

In the nine years I have been with my hubby, he refuses to let me marinade steaks, but yet he douses them with ketchup! He raves about steaks when we go out to eat and I have tried to tell him they use a marinade. Finally tonight he let me marinade them!!!!! I sliced the onions large and soaked them with the meat. When it came time to grill, we placed the onions in foil and grilled them seperate. His first bite was of onion and he raved about how good it tasted. Then he bit into his steak....he didn't even put ketchup on it!!!!!! He loved it! I also loved it. I did not change anything in the recipe. We will be using this from now on....even if it is just for onions!

Serbian Ground Beef, Veggie, and Potato Bake

I REALLY liked this one! There is so much flavor to it! The only thing I left out was the celery since the poor stuff was quite wilted and sick looking in my fridge! (It did go straight into the trash by the way!!!) Anyway....I added a touch more red wine, I chooped baby carrots instead of shredding one, 4 potatoes and a little extra cinnamon. There is something so devine about mixing beef with flavors like cinnamon...I love it! Hubby is a huge meat and potatoes kind of guy and he went to town on this dish! There weren't any leftovers! This will be a regular at my house....but will be known as the garbage dish.....I had part of a pepper, part of an onion, a small amount of red wine from the night before, potatoes that needed to be used up.....and this dish used up all the leftover stuff so I didn't have to toss it! Great flavor! Thanks for sharing!

Easy Decadent Truffles

I don't think there was a single person that had one that didn't ask for the recipe! They were a HUGE hit and so easy to make! I have only made them this one time (and will surely make more in the future!) and I just used the vanilla flavoring. Next time I will play around with other flavors. Some I rolled in nuts, powdered sugar, cocoa, some I melted semisweet chips with shortening and coated, some with vanilla chips and some with milk chocolate chips melted with the shortening. I used sprinkles on a few, hot chocolate powdered mix.....basically whatever I had laying around! These were a lot of fun to make!

Tuna Dumplings

This was a nice change to the menu and a fun new thing to do with tuna. The sauce was VERY rich. I used a cream of celery soup instead of the broccoli. I think next time I will mix it with a half and half or just regular milk. I will cut the salt and pepper in half also and maybe add some chopped tomatoes to the mix. Thank you for sharing the recipe!

Outrageous Chocolate Chip Cookies

Outrageous is the key word in this recipe! ABSOLUTELY PHENOMENOL!!!! I have finally found the perfect chocolate chip cookie recipe. I have been looking for one that uses oats. The only problem I have been having is the dough either runs and/or the cookies don't bake right. They bake around the edges and the center is left half unbaked. These did NOT spread or run at all and the greatest thing is the dough didn't even need to be refrigerated. I don't think I will use any other recipe than this one!!! No changes are needed!!!!! Thank you so much for sharing!

Ann's Shrimp Etouffee

This was very good. The changes I made were minimal. I added some tomato paste, used pre-cooked shrimp, and for the fluid I used chicken broth (although white wine would've been my first choice but oddly didn't have any on hand!). I served this over brown rice. I will be making this again!

Banana Crumb Muffins

Delicious! The changes i made were as follows; I added 1 tsp vanilla extract to the mix, only used 2 bananas, and added 1/2 tsp cinnamon to the crumb topping instead of 1/8. I needed to add a touch more butter to the topping to make it more crumbly. These are very moist and my family loves them!

Chicken Tikka Masala

Call me sheltered, but I have never had Indian food so this was my first! I followed the recipe as is, except omitted all of the salt as I gathered from other reviewers. I also cut the 'fire factor' in half as I am a total whimp when it comes to heat! I served this over brown rice with a vegetable side. This has very distinct flavor (as Indian food does). My kids were not fans of this AT ALL but I will make it again someday.

Golden Sweet Cornbread

Very good! If you don't care for chunks of corn in your bread, this is a great recipe! The only change I made was using white corn meal instead of yellow because that was all I had on hand. I don't htink there is any difference in taste and it still looked "golden" when it came out of the oven. Perfect texture, perfect moisture, delicious! Dip it in a little honey and you have a perfect little snack!

Boston Cream Cheesecake

Very good stuff! I am a HUGE fan of boston cream pie AND cheesecake and the only place that I have found that sells this is the Cheesecake Factory. I was thrilled to see I can make it myself! I made this over the holidays and as another reviewer discovered, a regular box of cake mix is too much! I still proceeded to make the recipe with the entire cake mix. The problem I ran into......the cake was undercooked when I placed the cream cheese filling in so it became a HUGE mess. When it was all said and done, it all baked and tasted great, it just was not at all worthy of a picture! I will surely make this again and use only half the cake batter!

Southwestern Chicken Roulade

This was great! A nice change! Although I forgot to add the salsa to mine, it still tasted great, but would've been better with! I live a sheltered life, but this was the first time I had tried chorizo....LOVE it! This is an easy recipe to play around with. You could make it mild or hot, or change the cheese up a little, pour a cheese sauce over, whatever! I didn't make any changes to the recipe and it was great! (Just don't forget the salsa!!)

Asparagus Angel Hair Pasta

If it could be 4.5 stars that's what I would've chosen. This was a great recipe which I agree with others, has many unusual ingredients! The only thing I changed was I used a shredded Mexican cheese that had the queso asedero in it but also a blend of other cheeses. I also omitted the dill since my husband does not care for it and I substituted it for basil. It needed some extra salt and next time I may try to make the base with a cream of chicken soup and mily to make it more creamy. But this was great! Nice and light! A great way to get in a healthy dose of veggies. Oh and I also added shrimp. Next time I will up the amount of veggies and shrimp!

My Kid's Favorite Pork Chops

Very good! This recipe is so easy, simple, not many ingredients and delicious! I used boneless pork chops and they were as tender as could be! I used a seasoning salt since I don't quite care for steak seasoning. I will play around with the seasoning next time but wither way, this was great!

Grandma Johnson's Scones

Ahhhhh perfection! I am a pastry-eating junkie so trying to keep these out of my mouth is difficult! The changes I made were minimal. As a previous reviewer had mentioned, I added and extra 1/2 cup of sugar. I divided the dough into 2. In one half I added 1 tsp of cinnamon and 1 tsp vanilla extract. For those I also made a vanilla glaze with confectioners sugar, milk, vanilla extract and a touch of almond extract. The second section I put dried cranberries in and made an orange glaze for those with confectioners sugar, grated orange peel and orange juice. It was the perfect combo! This is only the first time I have tried this recipe, it was actually a test run for a baby shower I will be hosting in the near future. This surely passed the test and without hesitation I will be making these for the shower guests!!!!! Thank you!

Banana Cake VI

OKay, the taste is great and the frosting is superb! I'm not sure if there was a personal error on my part but it was VERY dense and took more like 2 hours to cook all the way through. I am kind of a freak when it comes to things like this so I will be making again and again until I perfect it! I might try putting it in a bar pan instead of the 9x13 to try to even out the baking process. Maybe it will give it a little more of a cake texture too. I followed the recipe as is and didn't make any changes (I think..lol).

Chicken and Dumplings III

Scrumptous! This made an excellent dinner that needed no side dishes! You have your meat, vegies and bread all in one stew-like dish. This was the first time I made dumplings and it went quite well. I could have cooked them a tad longer but it was still very good. The changes I made were very minimal. Used Olive oil instead of vegie oil to cook the chicken, onions and celery, added rosemary to the dumplings and did not sift the flour. The next time I make this (and trust me there will be a next time!) I will double the recipe for the broth mixture (cream of chicken, chicken broth and milk) because it could of used more of that and I will season the chicken breast's. I'm not quite sure with what yet but chicken is such a bland meat. It was very moist and tender in this dish though! This was also my husbands first time having chicken and dumplings (weird!) and he liked it. THe only complaint from him was also that it could've used more of the broth mixture. But anyway, FABULOUS!

Army SOS Creamed Ground Beef

Yummy! My husband is crazy about creamed chipped beef, but I on the other hand find it to be a bit bland. This has more taste than the chipped beef. I served this over egg noodles (with a touch of butter on them) and added a bit of salt seasoning. Next time I may add a little garlic and/or onions and some mushrooms. This is a great, easy recipe. Thank you!
