Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Jun. 5, 2008
This was good, but it just needs a little extra something. I'm not sure what that is yet, but I will figure it out! Maybe next time I will go a little heavier on the balsamic. This was easy to make and there were no leftovers!

Black Thai Pork

Reviewed: Jun. 5, 2008
WONDERFUL! This was very easy to make. With great hesitation, I had guests over to eat this dish the first time I made this. Looking at the ingredients I must say I was quite worried about what this was going to taste like and felt maybe I shouldn't be feeding others with this new dish. I kept everything the same, but just added a little cayenne for some hot factor and some red and green peppers. EVERYONE loved it and are STILL raving about it. My picky hubby said this was the best dish I have ever made!Thank you for a very tasty and easy dish!

Exquisite Pizza Sauce

Reviewed: May 23, 2008
This is a great pizza sauce! I think this will surely replace the stuff in the jar!!! Very easy to make too. The ONLY reason it didn't get the fifth star is because it was a little on the sweeter side than what I cared for. Next time I may omit the honey and replace it with a little cinnamon.

Brilliant Potatoes With Paprika and Caramelized Onions

Reviewed: May 20, 2008
Tasty!!!!!! I REALLY like these! I used fresh potatoes, and boiled them first. I thought while making them that the garlic would be a very heavy taste, but it was not at all. The sweetness of the added onions is great! I will make this again and again...thank you for sharing! By the way...I made NO changes to this and they were perfect!

Sloppy Joe Sandwiches

Magnificent! So easy. I doubled the recipe and made it with 1 lb. of beef. This is the perfect thing to whip up while the kids are napping and throw into the crockpot to keep warm until serving time. I think these just may be my favorite so far! Thank you!

Lasagna Alfredo Roll Ups

Reviewed: Apr. 27, 2008
Very good. I made a few changes...I used lowfat cottage cheese instead of ricotta because that was all I had on hand, used a shredded three cheese parmesan cheese, added some oregano, basil, nutmeg and parsley to the mix and also added some ground pork italian sausage. We did not have any alfredo on hand and my husband does not care for that sauce, so I used a marinara and it still turned out fantastic! My kids ate these all up! I would like to try it next time with the alfredo.

Faux Jerk Chicken

Reviewed: Apr. 23, 2008
Fab! Great taste! I did not have the pepper it called for in this recipe so I used finely chopped jalepenos and it worked great. My husband is a beef guy and hates when I make chicken, but he loved this one and this is the first time I have ever seen him eat all of it! Thanks for the great recipe!

Jalapeno Popper Spread

This was a huge hit with our guests! I used fresh jalapenos instead of canned and I cut the recipe in half. I also used a parmesan, asiago grated cheese blend. Delicious! I served it up with crackers.

Strawberry Pie II

Reviewed: Apr. 14, 2008
This is 5 stars for the taste, but I had to give it 4 stars because even though I decreased the amount of water and added cornstarch, it never set. I had to freeze it and eat it as a frozen dessert (which is okay too). I will make this again, but I will need to add more cornstarch. I even tried to add some unflavored gelatin to it to thicken it up a bit but it didn't work. bummer. But excellent taste! Add some vanilla extract and powdered sugar to the whipping cream to sweeten it up a bit.

Strawberry/Rhubarb Crumb Pie

Reviewed: Apr. 14, 2008
VERY VERY VERY good. I am not usually a fruit pie type of person, but I lOVED this one. I did not have any rhubarb, so I used mainly strawberries and some frozen mixed berries. I added some cornstarch to the filling but not quite enough, so the next time I make this I will be sure to add more cornstarch. This pie was a hit with our guests too!

Whole Wheat Beer Bread

Reviewed: Apr. 11, 2008
Yummy, and so simple! I actually left out the whole wheat part and just used 3 cups of bread flour. Used the good ol' Kitchen Aid mixer with bread hook to mix, top with a little butter and bake. So easy!!!! Served it up with a little soup. Thanks for sharing!

Banana Cream Supreme

Reviewed: Mar. 23, 2008
SO easy and SO good! I don't usually cut corners, but this time I did....I put the filling into a premade graham crust. I whipped up some heavy cream with vanilla extract and some confectioners sugar to put some around the edges of the pie and I put some mixed, chopped nuts on the whipped dollops. Since this is SO quick to make.....I will surely be making it again!

Carrot Cake III

Reviewed: Mar. 23, 2008
Wonderful! I made this AS IS and it was great! I made it in 2 9 inch round pans and I did omit the nuts. It failed to rise much in the oven and was sunken down looking in the middle but it was still cooked through and the taste was still wonderful. I will surely make this again. I used the recipe as is for the frosting also, although I didn't measure out the confectioners sugar, I just eyed it and taste tested it!!! I served this up after Easter dinner and it was a hit! Next time I might try it with other suggestions using brown sugar, nutmeg, etc. just to see which way I prefer. But this is worth making!!!

Cream of Fresh Asparagus Soup II

Reviewed: Mar. 20, 2008
So far my favorite asparagus soup recipe from this site that I have tried. I did things a li,ttle differently just so I could tend to my chaotic household! I placed a can of chicken broth, onions, and asparagus in the crockpot so when I was ready to cook dinner, that was already done. So when making the flour/butter mixture, I added a little extra chicken broth so I probably used about a can and a half total. Add a splash of sherry wine with that too! This was quick and easy. I served it up in bread bowls. Delicious!

Cake Balls

Reviewed: Mar. 16, 2008
Ahhhh...now this hits the sweet tooth! Try keeping the cake balls out of your mouth during the frosting process! I ate enough to give me a stomach ache! Ha! I made these for a friends birthday which is on St. Patty's day. I used a white cake mix with white frosting and added a tsp. almond extract and some green food coloring. I used white and chocolate almond bark and also dyed some white bark with green food coloring and used some green sprinkles. Getting them "frosted" was a little time consuming but they turned out delicious! Watch out though...kind of like those "mini" candy bars and how you think it's okay to eat like 10 of them...same thing here!

Marinated Grilled Shrimp

Reviewed: Mar. 16, 2008
I strongly urge you to try this recipe! The flavor is outstanding! I did not change anything. I just added some onions, tomatoes, green peppers and jalapenos to the skewers and brushed them with the marinade while it was on the grill. It will be hard to eat shrimp any other way!

Mexican Bean Salad

Reviewed: Mar. 16, 2008
Yummmm!!! This is similar to a salsa that I make but a whole lot easier! The red wine vinegar adds a wonderful flavor to this dish. This is great as a chip dip and also fabulous served over a bed of greens. This is a keeper! Instead of hot sauce, I added Hot Chili Oil (just has more heat and I don't care for the taste of tabasco) and next time I may add some fresh chopped jalapenos.

Chocolate Mousse Cake IV

Reviewed: Feb. 25, 2008
I should have used a better cake mix. I thought the mousse part was great. It wasn't too heavy where it broke the cake like mentioned in previous reviews. This is VERY rich and it takes a lot for me to say that because I have the biggest sweet tooth of all! I will surely make the mousse part again, but maybe put it on an angel food cake or something, but next time the cake will be made from scratch. I followed the recipe as it is written. Just be sure to grease your cake pans up so the cake doesn't stick!!
