Grilled Beef Gyros

You can cut a lot of time out of this by substituting the sauce portion of the recipe for cucumber ranch dressing. That is what I did and it tasted fantastic! The flavor of the beef was wonderful. I had it marinade for a couple hours then I cooked it on the stovetop. I cooked it with the onions that were in the marinade so they were slightly cooked instead of raw...personal preference. This will become a staple at our house I'm sure. My husband loved them! They had a perfect amount of heat factor but since he likes to sweat...I will probably add a little more next time!

Meaty Stuffed Onions

These are great! Yes, a little time consuming but not bad. I boiled the onions closer to 30 minutes since I was using large onions. I also used purple onions because I like the sweetnes to them. One thing I did to help separate the layers is run a toothpick along the edges of the top and bottom of the onion. The onion stayed together just fine when I parted the layers. I used only 2 onions and used all the layers I could out of them and got about 4 large stuffed ones and 5 or 6 smaller ones. I then topped them off with some shredded mozarella before putting into the oven. Yum! I also used a whole pound of the sausage. These will surely be made at my house again!

Roll-Out Cookies

I love that you don't have to take time to refrigerate this dough.....big time saver! I did find the dough to be quite sticky though so I had to keep adding flour until it was in a workable form. I did not care for the lemon extract. I prefer almond which I will be sure to use next time. The glaze works great and gives a shiny finish. Next time I will eliminate some water and replace it with almond extract in that too. Otherwise they baked up nicely and my kids really had fun!

Baja Sauce

For sure!!!!!!! Lovin this one! So easy too! We used this on tortilla chips and our chimi's. You could just about eat this with a spoon!

Rossi's Sausage Gnocchi

Huge hit at our house! I made homemade gnocchi for this and changed the sauce up slightly. I used a can of chopped tomatoes, a can of tomato sauce and a can of tomato paste and also used ground sausage instead. I am sure my husband will be requesting this over and over again!

Rosemary Marlin with Roasted Corn and Tomato Relish

This was great. Although I did not have fresh rosemary, (I used dried) it still was great. The corn and tomato relish could and WILL be used with other dishes and also just as a side dish. One of the great things about living here in South Dakota at this time of year is the most wonderful tasting sweet corn fresh off the farm. Using sweet corn really gave this relish a nice taste. I did not alter the recipe and I don't feel like I would need to add or take anything out...it's great! 9/17/08 I made the relish as a side dish tonight and it was great....be sure to use sweet corn and not field or frozen corn (or add a touch of sugar to the mix)!

Wisconsin Bratwurst

I must agree with the one that said this really dries them out. I did not have good luck with this at all. The brats were VERY dry. I think it would be better if the brats just soaked overnight in this mixture without being pierced open. It seems others have had good luck with this so it's worth a try!

Stuffed Strawberries

Unfortunately my family and I were not a fan of these. I followed the recipe as is. Not sure exactly what it was that we didn't care for. I served them over a chocolate mousse that I made and drizzled chocolate on them which made them much better, but we couldn't eat them just by themselves. They are very pretty though I must say! I am sure I will make these again for a get-together sometime but serving it with a sinful dose of chocolate is a must!

Secret Burger Sauce

I will never make burgers without this again! I ususally don't care for pickles on my burgers so I was hesitant with this one but it all blended together nicely for a great taste. So simple, easy and quick!

Baby BLT

Yeppers...this one is a KEEPER! These were gobbled up in minutes between 4 people. I will surely have to double it up if I take them somewhere! The great thing, is you COULD (not that I would) make them less fattening by using a ff mayo and some of that low fat microwaveable pre-cooked bacon. Anyway, very tasty, a bit time consuming but worth every moment!

Chicken Enchiladas II

I followed this recipe as is. I thought it tasted a bit 'cream-of-mushroom soupy'. I think the addition of some garlic and for sure some cumin could help that out. They were good and I will make these again with a few tweaks. Its a nice change from the traditional red sauce! UPDATE: I have made these many times over. I add chili powder and some cumin and garlic powder (and once used a packet of taco seasoning). It adds a lot more flavor and makes these more enjoyable. My husband LOVES these!

Blueberry Buckle

These were great! Instead of placing the batter in an 8x8 pan, I put it in 4 ramekin dishes. I topped each off with a scoop of ice cream and everyone thouroughly enjoyed them! It was just like eating a big, warm blueberry muffin! I used the Kitchen aid mixer to 'cut' the butter in which saved tons of time and effort.

Chicken Cordon Bleu II

If there would be a 100 star rating, this one gets all stars!!!! I made this exactly as is (other than changing out the swiss cheese for provolone). It was easy to make, the chicken was tender and the taste of it all together with the sauce was so flavorful and rich. This is a keeper for sure! This is one of the best recipes I have made from this site.

Sweet Summer Fruit Bruschetta

Simply delicious!!!!!!! I could eat a whole baugette of this bread myself! This could EASILY be served as an appetizer or dessert. I didn't change anything with the recipe. Very easy to make, very tasty, and a wonderful treat on a summer day!

I used ground pork sausage instead of the chicken. I will continue to make this recipe as my family LOVED it! I will stick with the beef or pork and use a 14oz can of tomoatoes next time. Very easy and very tasty!

Cream Puffs

Really???? It's this easy????!!!!! I will never again buy store bought ones! These turned out fabulous!!! I added 1 tsp vailla flavoring to the batter and that is the only change I made. Everyone raved about how good these were! I didn't have any problems with not cooking all the way through and I let one pan cool in the oven with the door ajar and one pan cool on the stovetop and I poked holes in the sides of the pastries to allow the heat to escape. The ones on the oventop sank, the others did not but I was still able to work with the ones that sank. I baked them on a cookie sheet lined with parchment paper. I garnished with chocolate syrup, powdered sugar and rasberries! YUMMY!!!

Saucy Herb Hamburgers

This burger has excellent taste! I love the thyme in it. I followed the recipe as is, but just added a little garlic powder and topped them off with some pepper jack cheese. The only reason I didn't give this 5 stars is because of the texture. They were a little tough to grill because they wanted to fall apart and the texture when eating them is a little different too. But that is to be expected when using egg and bread crumbs! GREAT taste though! Thank you!
