Royal Icing III

Awesome, awesome, awesome! This works GREAT! I used this to ice gingerbread cookies. This will surely be my go-to recipe for decorative icing from now on. It dries very nice (dries hard so it doesn't get all messed up when you stack cookies on top of each other). And it was SO easy!!!!!

These are the best!!!! I did not change or alter anything! These came out very soft and chewy and have remained that way through storing them. I used royal icing III to frost them which worked great!

Garden Fresh Tomato Soup

I probably should not post a rating to this since I had a cold when I ate it so my taste buds may have been a little off. I was looking for an easy, tasty, low fat soup that I had all ingriedients for on hand. This looked very easy and it was very easy. I pureed 3/4 of the mix to make the soup a bit thicker and I also added some basil and lite sour cream since I was out of cream. This soup was good, but I do prefer a tomato base (tomato juice) rather than broth.

Pork With Sugar Snap Peas

This is one of those recipes that is even better the next day. If you combine the peas, pork and the sauce and refrigerate it over night, the pork absorbs all those wonderful flavors. I simmered the pork in wine and broth for the cooking method and cooked the peas in a seperate pan. I also seasoned the pork up a bit with some seasoned salt and pepper.

Monterey Chicken Fajitas

This is good, it just needs a little extra zip added. I added a red pepper and black beans to the mix. I also added some garlic powder, chili powder and cumin as the sauce was quite bland. You could easily add a packet of fajita or taco seasoning too. It was a nice creamy mixture and nice and gooey after the cheese melts on them!

Mexican Chicken I

I was concerned that this would dry out during the cooking process but there is enough liquid in the salsa to keep it moist. I omitted the seasonings and just made it a little easier and used a packet of taco seasoning. I used half the saesoning directly on the chicken and the rest I mixed with the salsa. I used 1 can of beans and used frozen corn in place of the other can. I also added a bit of cheese! This was very tasty!

Creamy Chicken Rice Soup

I like this and like that it is a little lower in calories and fat. I was going to try to crock pot it, but changed my mind. I did let this simmer for a couple hours prior to adding the milk. It was very thick so I would suggest either adding some extra chicken broth or water to the base or using half the amount of flour. I prefer a thicker soup. I used plenty of carrots and used wild rice in place of regular rice. I will be making this again and again!

Iced Pumpkin Cookies

These were a hit! I love that they are 'cakey' and soft! Like a friend said...it's like a muffin top! I iced them with a cream cheese frosting instead of the glaze. Very delicious! They freeze well too!

These were good. I like the flavor of the bacon with the beans. I think it would be great to thicken the liquid a bit after the baking and pour over the beans lightly.

Big Ed's Cajun Shrimp Soup

Wow....this is EASY EASY EASY to make and tastes great!!!! My hubby told me after I made it that this was his new favorite soup! I really kicked up the heat with some extra red pepper flakes and the hot sauce I use is CRAZY hot. I was short on tomato juice since I need it for a different recipe and didn't want to go to the store so I used 1 can of tomato soup (condensed) and 1.5 cups of V8. Instead of using the 1/2 cup of water, I used chicken broth and added a touch extra to help dilute down the soup a bit. I used pre-cooked shrimp so I only threw them in at the last minute to heat through and I also didn't have clam juice on hand which I usually do and didn't realize this until after I had started to make the soup. I used fish sauce in place of it but next time I will be sure to go for the clam juice for that seafood flavor! The only thing I don't agree with is the serving size...it states this makes 6 servings, but they are not "american" servings....it made us 3 good sized bowls.

Playgroup Granola Bars

Very esay to make, doesn't take much time or effort. I used dried cranberries in place of the raisins. I made these for my daughters pre-school class and everyone loved them and the teachers even asked for the recipe. Next time I will make them with some peanut butter and chocolate or PB chips. I took advice of another reviewer to make them softer by not spreading the mix all the way to the edges. They turned out perfectly soft and chewy and remained that way!

Angel Hair Pasta with Garlic Shrimp and Broccoli

Not sure how to rate this..I don't think I am a big pesto fan. But for this recipe, you can really cut a large amount of time off this if you boil the noodles, steam the broccoli, saute the shrimp and cook the sauce all at the same time. This recipe uses MANY pans FYI. Instead of sauteeing the shrimp in butter, I used olive oil and when all was done, added red pepper flakes. We also used whole wheat pasta. My husband really liked this dish.

Simple White Cake

I am so sorry, I hate to give a bad review but I did not like this cake at all. The texture was light and fluffy but dry. The taste was not to be desired....I actually didn't even finish my piece which may be the first! It seems that it is missing some more sugar...it tastes like a 'diet' cake. I guess that is the only description I can come up with. I sifted the ingredients together and followed the recipe exactly.

Cream of Pumpkin Soup

This is the first time I have tried pumpkin soup and to my honest surprise, I liked it! I love the texture...nice and thick and creamy. I omitted the crutons just because I was trying to cut calories where I could for the needs of a family member. I don't think this is a good 'main course' dish, but it serves well as an appetizer or side dish. It's not too 'pumpkin-y' in flavor, but it is slightly rich. Next time I am all over those crutons though!

Asian Tuna Patties

This was a nice, new way to utilize canned Tuna! I used tuna that was in oil (mistake that happened at the grocery store! lol) which may have actually helped it to stick together a little. I may replace the sesame oil next time just because I am not a huge fan of the taste, but I can tolerate it. I will replace it with hot oil. I used olive oil to fry these in and added some hot oil to that to give the patties a little kick to them. My husband really liked these.

Tropical Grilled Pork Chops

There is some very time consuming parts to this recipe. I ran out of time (because I didn't read in detail ahead of time that you have to simmer the marinade for a total of 30 minutes before it is ready) so I skipped the marinade process. I also didn't have any applesauce on hand so I pureed an apple and it worked great. I simmered the pork in a broth/white wine mix while my sauce was simmering. It left me with a very tender flavorful chop! This has EXCELLENT taste! I wasn't sure how it was going to turn out with all of the seasonings mixed with the fruit, but it is AWESOME! Give it a try!!!!

Sweet, Sticky and Spicy Chicken

Yep...we like this! I made it a little extra hot...I don't care much for tabasco, so I use a different kind of hot sauce that burns pretty good! Also, after the simmer, there was quite a bit of sauce in the pan so I thickened it with cornstarch and water and drizzled it over the chicken. I served the chicken over fresh, steamed green beans and it was great!

Easy Pot Roast

This was good. I like a thicker broth when it is all said and done. Next time I may have to do a roux of some sort to get that texture. The meat was very moist and tender in this dish.

One Bowl Chocolate Cake III

Chocolate goodness! This was VERY moist and tasted more like a brownie than a cake. I made it for a birthday party and covered it with a fondant and it held up well. Everyone loved the cake and I LOVE that it only messes up one bowl!
