Beth's Spicy Oatmeal Raisin Cookies
These cookies are yummy! I didn't have butter flavoured shortening, so I just used regular shortening. I used butter that had less fat and I reduced the white sugar by a bit. The taste was still nice and sweet, I probably could have reduced the sugar even more. It turned out crispy on the outside and chewy on the insdie. The spices make it gingerbread-like. I love oatmeal raisin cookies, and the spices give it a nice kick.

Simple White Cake
I made this recipe as cupcakes. Very yummy, but like the other members said, the texture is dense. I would have liked a more fluffy texture but it was still good. I altered the recipe a bit by increasing the amount of milk as others have suggested. I put in about 3/4 cups. I did not adjust the vanilla amount, it was just right. Good recipe but still looking for a better one for cupcakes.

Light and Fluffy Spinach Quiche
Excellent recipe. I've made this twice already. I changed a few things as suggested by the other members. I sauteed the onions first and put in 5 eggs instead of 4. I also decreased the amount of frozen spinach by 1/2. I used marble cheese. I think next time I will use a deep dish pie crust because it was quite full after putting everything in. Yummy.
