The Old Boy's Strawberry Pie
I used this recipe as base to build on. I made two pie crusts. Then I put the sugar, cornstarch, and flour in a bowl. I found it easier to roll the strawberries a few at a time in the mixture (stir mixture well). Then I placed them in the first pie crust. I then basket wove the second pie crust for the top. Next I lightly squeezed a lemon over the pie. I melted butter, mixed butter with nutmeg and cinnamon; which I brushed on the basket weave. This turned out amazing. Today I am making it again, to my husband's request. Only this time I don't have a lemon , so I sprinkled 3 tbps hard apple cider over the filling before doing the basket weave. It's in the oven, I think it will be great!

Marinated Scallops Wrapped in Bacon
Very yummy. We cooked the bacon in a frying pan with extra virgin olive oil, leaving it pliable. Next we wrapped the scallops each in a piece of bacon, didn't need toothpicks. Put in the oven and used a thermometer to make sure the scallops didn't go above 145 degrees. We made the sauce separate and didn't use brown sugar. It was very sweet as is - almost too sweet, but I didn't use measure spoons/cups. Also sauteed some mushrooms and almonds as a garnish.

Chinese Green Bean Stir-Fry
This recipe made a full meal when I added shrimp, snow peas, and shiitake mushrooms. I divided all the ingredients by 4, it made 4 servings for my boyfriend and I.
