Weeknight Chicken Cordon Bleu
Super good and easy. The bread crumbs didn't stick to the chicken very well. Next time I will use egg.

Aunt Eileen's Stuffed Eggplant
I used cheddar chesse in the stuffing (that's what I had) and spinkled parm. chesse on the top. This is a really good recipe I will be making it again.

Caribbean Grilled Crab Cakes
The crab cakes were okay, but the best part was the mango salsa it went really good with the crab.
