Pineapple Upside-Down Cake II
This was the first time making an upside down cake and I thought it was Yummy! I did make changes only due to I try not to use dairy and eggs too much. So instead of milk I used soymilk and pineapple juice. I used Ener G egg replacer and Earth Balance for the butter. Was not too dry doing it this way. Will make again.

Joelle's Famous Hot Crab and Artichoke Dip
This was a great dip. I did skip the heavy cream. Also next time I make this I will add more horseradish. It will add a little more zip, which I would like.

Best Tuna Casserole
This was an average recipe. I had added garlic powder, cayanne pepper, fresh cracked pepper for added taste. Seemed it would be bland without it. I used a 26oz can of cream of mushroom and almost a cup of milk and it still was not creamy enough. It was all absorbed by the noodles. Next time I will use another can.
