Enchiladas

This was sooooooo good! I did make a couple of changes to it according to what I had on hand. I used 1 lb beef, mixed in some wild rice and added 2 tsp crushed garlic, instead of the garlic salt, 1 4.5 oz can of chopped green chiles, a pinch of cayenne pepper, 1/2 packet of burrito seasoning (added while cooking the meat and onions) mixed all together with half a can of red enchilada sauce. We also used twice as much cheese (we love cheese). I served it similar to rolled tacos, with shredded lettuce, diced tomatoes and onions with a little chuky salsa on the side. Turned out GREAT! I don't remember ever having enchiladas that tasted so good. We will definately be making this again.

Fried Cabbage II

Excellent!!!!! Ths recipe is sooooo good! My wife and I made this. We didn't have cider so we used sushi rice vinegar instead. We also used four pieces of bacon as opposed to three. Turned out HUGE!! This is a keeper and goes great with french onion mashed potatoes and pork tenderloin. Thanks!!!

Greeked Zucchini

Definitely missing something. Maybe I'll try adding rosemary or tyme next time. Also You seriously don't need TWO 4 oz cans of sliced black olives. One was more than enough.

Basil Goat Cheese Pizza

Delicious! This one's real easy to make and quick. I used a boboli pre-made crust and it turned out great. Add italian seasoning and garlic to the crust for a little italian kick.

Vegetarian Four Cheese Lasagna

I'm trying the vegetarian thing for a month to see wether or not I like it. With recipies like this it makes the veg thing rock! This recipe is simple to make for "guys" starting out on the cooking thing. I made this for my wife and she loved it. Next time I make it I'll add portobello mushrooms and onions. The baked tomatoes aren't really needed and tends to make it more soupy.
