A true G.R.I.T (girl raised in the south). Originally from Tuskegee Alabama but moved to NW Florida almost 3 years ago. I'm engaged to a wonderful man that I absolutely love to cook for..also one new addition to the family. My yorkie..She's my heart. Very easy going, down to earth and love my family and friends.
My favorite things to cook
Oh my..where do I start..I love to cook just about anything authentic..I am not and never have been a "box person". I pride myself on cooking from scratch and I love a good challenge. Desserts and southern cooking are my fav.
My favorite family cooking traditions
HHHMMMm...not really a tradition follower. If I see something that ticklew my fancy..I'll cook it but I guess if I had to pick a holiday I would say Thanksgiving.
My cooking triumphs
Homemade authentic gumbo. My family almost died when they tasted my gumbo. I was so please with myself..everyone was giving me compliments and I felt like the queen of the day:)
My cooking tragedies
Oh my..I honestly can't say that I've had any..none to think of at least..I'll get back to you on that one.

Buttermilk Chocolate Cake with Fudge Icing
The cake wasn't horrible but it wasn't the best that I've had. It was moist as other users have said but you would definitely want to add more cocoa..I used 1/4 cup..I would also recommend sifting the flour before use or use cake flour.

Chantal's New York Cheesecake
Maybe I missed the boat on this one but for me it was just OK. It could also be that my expectations for this cheesecake was a little too high. Nothing about the dish stood out. I following all the instructions and even some suggestions such as the water bath and even then..my cake cracked. Not only one crack but several which wouldn't have made much of a difference if it was good but since it cracked and lacked flavor so I was just upset....I just have to give this one a 2. Sorry Chantal but I'm still searching for the perfect cheesecake and this by far wasn't it.

Authentic Louisiana Red Beans and Rice
This dish was absolutely delicious and packed full of flavor. With any recipe..you have to make it your own. A little of this and a little of that goes a long way. Of course it needs salt..you should add that before anything else is done...Most of these recipes are base recipes..something that you can build from. It's up to you to make it worth your while. With my revisions it was the perfect consistency, perfect flavor, just the right amount of spices..I did omit the celery and garlic clove. I used dried minced garlic, red and green bell peppers, lots of cayenne, Tony's creole seasoning and chicken broth...not that store bought stuff but just regular water with better than boullion chicken base..(can be found in just about any grocery store) instead of water, I also used a little sage and cumin. I replaced the olive oil and used butter. I seasoned my vegetables while they were carmelizing. I loved it and my fiance thought it was the best thing since white bread,,,needless to say I will be making this again.
