About this Cook
I grew up in the heart of Southwestern Louisiana, Cajun Country, Lafayette. It seems my passion for cooking was inspired when I was very young. Not only by my mother, but my grandmother Janie aka Red. While cooking, she would tell me stories of her growing up and her cooking experiences. I was hooked from that point.
My favorite things to cook
Italian food is no doubt my passion and favorite food to cook. French would be next because of my heritage.
My favorite family cooking traditions
In the kitchen cooking and everyone has a roll to play whether cutting onions or telling stories.
My cooking triumphs
Lasagna, grilled chicken fettuccini, smoked turkey, Savoca roll (named after a small town in Sicily) which I think is the best place on earth. On the sweet side, fudge, pumpkin roll and brownies.
My cooking tragedies
Ravioli - still not sure what happened but ouch they just desegregated. The inside mixture was great but that is about it!

World's Best Lasagna
Excellent but did omit the sugar, ground beef and fennel seeds. The Italian Sausage had enough fennel. Used hot and mild italian sausage - 2 cans Cento crushed tomatoes. 1 package fresh mushrooms chopped. 2 eggs. 15 oz Ricotta cheese. 5 lasagna noodles versus 6 each layer. 1 ladel pasta water. Lots of parmesan and mozzarella!

Tortilla Rollups II
This is alwasy a hit at a party. Changes I made: Added chopped jalapeno black olives Mozzeralla cheese and sharp cheddar cheese versus plain cheddar to give it a nice cheese bite. ~ 2 green onions (tops only) as they get a bit over powering with the Salsa ingredients. Extra cream cheese and extra salsa. Delish!
