About this Cook
Proud Marine corps wife! Married to a wonderful man, and we have 3 beautiful children together. I was also lucky enough to get 2 great sons as a package deal when I married my husband.
My favorite things to cook
I love to try new recipes! I hate trying to make things that call for ingredients that you will only use in 1 recipe, and never use again. Fast and easy are essential elements in my cooking, because we both work full time. But when I have time to build a large dinner...LOOK OUT!!
My favorite family cooking traditions
I love baking cookies with my kids and their friends around the holidays. Then we give them to friends and family!

Caldo de Res (Mexican Beef Soup)
Too good for words!! Use a small head of cabbage tho. Otherwise, make exactly as is. Delicioso!!

Quick and Easy Grilled Potatoes
My family says that potatoes are "boring". After I made this recipe, they ask for them at least twice a week! These are FANTASTIC!! I have found that if you do use a large potato, you need to increase the microwave time accordingly. The Kosher salt sprinkled on the outside gives just the right kick, and it was the first time my kids ate the potato skins too. GREAT RECIPE!!
