Caramel Apple Pork Chops

Reviewed: Dec. 15, 2009
Very good, kids and hubby all loved it. I really enjoyed it too. Used one large red delicious apple on three thin pork chops. Seasoned chops with seasoned salt, pepper, onion pwdr, garlic pwdr, seared in hot skillet, Made sauce first- added some apple cider vinegar to brown sugar mixture and butter and apple slices, and added 1 TBSP of corn starch, turning it into a thick glaze which was perfect. Oh- also caramelized onions in separate pan and covered seared chops with onions, then glaze, then slightly tender apples. Then cooked in oven on 350 for about 12 min- juicy, tasty, perfect. Served with mashed potatoes and mixed veggies. Never given 5 stars before- Definite repeat.

Chicken Noodle Casserole I

Reviewed: Oct. 14, 2009
Didn't think I'd like a canned soup casserole for fear would be bland or too salty, but lo and behold was great (admittedly w/couple changes)! Used 4 chicken leg quarters, boiled, shredded, then added to soup mixture w/ 1 can cream of chicken soup, 1 can cream of celery soup, garlic powder, sour cream listed in recipe, ital seasoning, and finish w/ 1 can of peas. Came out as amazing baked pasta dish (used penne). Lots of flavor and ital seasoning really brightened dish. Definite repeat for all at the table tonight!

Terry's Texas Pinto Beans

Reviewed: Mar. 5, 2009
OK flavor. Used red salsa vs green. Outcome could have been more flavorful. Will add more spices next time- Emeril has a great "southwest essence" seasoning recipe online- yummy but use only a little since spicy. Will make again though.

Garbanzo Tomato Pasta Soup

Reviewed: Feb. 28, 2009
Tripled recipe to fill crock pot. Canned garbanzo beans I got were a little hard, but soup still came out yummy. Will definitely try again with beans. May also sub mushrooms for variety.

Chicken Marsala

Reviewed: Oct. 29, 2008
Very yummy and easy, definite repeat. Didn't have sherry or marsala wine so used 3/4 cup vermouth and worked out very nicely. Also used ital seasoning vs oregano, added 1 onion to sauteed mushrooms, and splash chicken broth to sauce like other viewers said. Recipe is definite keeper!

Oven Baked Jambalaya

Reviewed: Mar. 21, 2008
Used web site converter and changed servings from 16 to 8.Attempted on stove top on med heat for 25 minutes total, first 10 med(knob 5), last 15 low(knob 3). Added red bell pepper too; put cubed meat in uncooked so will have creole flavor when cooks with rice. Came out beautifully.Great recipe. Thanks!

Best Marinara Sauce Yet

Reviewed: Dec. 14, 2007
Really yummy. Thick and chunky yet enough liquid to eat over pasta. My changes when tried, based on what I had at home: 2 TBSP dried parsley, not 4 TBSP fresh 4 cloves garlic not 1 1 medium finely diced onion not 1/3 ADD 6 tsp fresh chopped basil NO oregano 3 TBSP olive oil not 6 1/2 cup chicken broth, instead of white wine (didn't have, but next time will try with Pinot Grigio) ADD 1 bell pepper, chopped ADD sliced mushrooms- 8 oz of baby bella Brown meat with onion, 3 bay leaves, and 1 TBSP ital seasoning then cook in crockpot on high 3 hrs and serve.

Chicken Tortilla Soup V

Reviewed: Dec. 10, 2007
Excellent! Modified only because of what I had on hand: used 2 cloves of garlic to saute leftover Thanksgiving turkey, used 1 medium onion, replaced water and bouillon with turkey/herb drippings, replaced lemon juice with fresh lime juice. Added 1 can black beans while simmering and fresh chopped cilantro in last 10 minutes. Used PACE Picante sauce. Came out super yummy: best tortilla soup I've had thus far. Thank you!

Turkey Pot Pie I

Reviewed: Dec. 7, 2007
Followed recipe in all things, except instead of 2 cups water plus bouillon, used 2 cups of turkey broth since had plenty leftover after Thanksgiving. Bottom crust came out doughy- next time will follow reviewer's advice and bake bottom crust for 10 min before anything. Also cooled mixture a bit after thickening and had no problem with mixture being watery. Brushed top crust with beaten egg for extra golden color- worked out great, looked and tasted good. However filling came out enough for 2 pies- will either make second pot pie with extras or, might just make some rice and pour over it, like a "turkey a la king" meal. Very yummy taste though, will make again.

Basil Chicken over Angel Hair

Reviewed: Oct. 25, 2007
Very yummy. I must admit I made some changes to suit my taste buds, so here they are: Placed in gallon ziploc bag, 4 cubed chicken breasts along with: 2 tbsp italian seasoning 1 tbsp garlic powder 1 tbsp essence of emeril (recipe on food network) 2 tbsp onion powder 2 tbsp olive oil Keep all in bag, shaken, in fridge til sauce ready for chicken to be cooked. First added onions and garlic, let start cooking while chopping 9 roma tomatoes, added, then chopped 1/2 cup fresh basil, then added raw seasoned chicken from gallon bag. Added 1 cup white wine and put on low/med heat for 5 min to start cooking chicken. Then proceeded with rest of recipe as written. Came out flavorful and very garlicky, but that's a good thing in my book! If you try it, hope you like it!
