Eggplant Parmesan II
This was a great recipe and very easy to make and prepare. The flavors were great, but I think when you fry the eggplant rather than bake it, it makes the eggplant taste better, even though it's not as healthy. Breaded fried eggplant is one of our favorite foods, so maybe we're a bit partial to that. But otherwise, it's a very good dish to make for supper
