Chocolate Fudge Buttercream Frosting
I just made this for the second time and it is still wonderful. I didn't have the hot fudge on hand so I used the entire 1/4 cup of milk for extra liquid. I also added pecans this time...my son was eating it like ice cream!

Black Bean and Corn Pasta with Chicken
Everyone who ate it liked it. The only changes: whole wheat pasta, stewed Mexican tomatoes instead of the plain diced...this also allowed us to omit the hot sauce, we season the chicken before grilling it. Pretty simple and quick.

Fudge Truffle Cheesecake
I really don't need to comment on this cheesecake...it's chocolate cheesecake, it's wonderful!!!! I want to comment on a discovery I made while making it...I dipped strawberries in some leftover batter and OH MY GOD....so good. I have no idea if the batter would hold up if you tried to serve it this way, but if you make this cheesecake I highly recommend you try the strawberry dip.
