Nigella's Custard Tea Cake

Good, but be careful not to burn the custard! Bake in 6" pan. Use 1/2 cup plus 1 tbsp butter. The substitution for self-rising flour is 1 cup AP + 1.25 tsp baking powder + 1/8 tsp salt. Sift. It would be easier to double the recipe so that the required flour is 1.5 cups rather than 0.75 cups. If doubling, bake in a greased and lined springform pan!! Use the same amounts of sugar but just granulated. Use powdered sugar on top.

Zucchini-Chocolate Chip Muffins

I used half plain yogurt and half the oil (canola) instead of veg. oil, and used 50% more chocolate. Also placed a chocolate chunk on top of each. Muffins came out moist and delicious!

Used half the amount of jalapenos to be on the safe side...use full amount if others are also into spicy food. Use half or at most 75% jalapenos to be safe.

Simple White Cake

This is a very good white cake. I used 3/4 the amount of sugar and sifted the flour before mixing. I did add a bit more milk but I don't think it would have made much of a difference. I made this twice in a matter of days, one with strawberries and cream and the other with blueberries and cream. Delicious.

Exchange Gang Pasta with Shrimp

Whoa nelly, this makes a lot of food! I added the tomatoes at the end so they were still a little firm, and I only fad frozen spinach. I also found that I needed a little more half-and-half. It turned out great though. I was looking for a recipe that I could make fast and without having to go to the store, since we were low on groceries and it was raining out. This one fit the bill. Thanks AR exchange gang!

Coffee Souffle

Pretty good. I think the brewed coffee should be rather strong for best flavour. Also, the custard never got *very* thick but it set fine. I think this makes 10 smallish servings or 8 moderate ones.

Sukhothai Pad Thai

Great stuff! I made the sauce as written, but without the sugar added at the end. I toasted some raw peanuts and ground some of them using a mortar and pestle to have different crunchiness. I used shrimp, chicken, and tofu. Added scallion and cilantro to garnish, but mint and lemongrass would be good garnishes too.

Healthier Graham Cracker Crust

It tastes good and is low-fat, but I found a few problems: it doesn't make *quite* enough for a standard 9" pie pan, it was too soft, and it became soggy after sitting in the fridge for a day. BUT I think I would use this recipe again if I were to make a pie that I know can be finished at one meal.

Seven-Layer Gelatin Salad

I didn't want to make the full recipe, so I halved it: used two packages of fruit jello (orange and lime), one envelope of knox gelatin, etc. Each package of jello thus made two layers--instead of four different flavours, I had two which were repeated. Instead of vanilla, I used a good amount of fresh lemon juice in the sour cream layer and only a scant amount of sugar. Served with lime wedges or lemon wedges, it is a nice cool citrusy dessert.

Walnut Rice Salad

So delicious. I used a whole apple because I had smaller ones. Reduced oil by half, and used evoo instead of veg. I should have added some cucumber too, as I had a lot of it that I wanted to use up. I used white rice and bet brown would have been even better. I think this tastes best at, or near, room temp. Chilled rice has a hard texture.

Turkey Garbanzo Bean and Kale Soup with Pasta

The flavour is good, but whoa nelly, the pasta pushes the soup over the edge (in terms of heartiness)! I would use less pasta or perhaps none at all. I also threw in some chopped cilantro and a few tbsp of cooked lentils that I had left over from another dish.

Easy Beef Stroganoff

White Gelatin

Husband and son liked this a lot. I thought the cream cheese flavour was a bit overwhelming (and I like cream cheese a lot too) but it's still a nice smooth dessert. It reminds me a bit of almond gelatin, an Asian dessert; I think I might try this again with a wee bit of almond extract. Thanks for the recipe!

Pretty delicious. I used orange peppers because that's what I had, and it still turned out well. Added nice colour too. My husband isn't a fan of olives and my son doesn't like capers much, but they both liked them in the dish.
