Peanut Butter Bars I

I took these to work and they were gone in no time. Good thing I tried one before I put them out. They were delicious, but a little too soft and were falling apart when I cut them - not sure how to fix that - maybe more graham cracker?

Gourmet Sweet Potato Classic

This got many compliments at Thanksgiving. Boiled the potatoes and left out the cream. I think I'll be making this every Thanksgiving from here on out. The topping is the best!

Tasty Tuna Burgers

This was yummy! I also used 3/4 cup bread crumbs and added some extra seasonings, as I didn't have chili sauce. I added 1/8 tsp cayenne, 1/2 tsp curry, 1/2 tsp cajun seasoning. They were very similar to crabcakes and I mixed some mayo and spicy mustard at the last minute for dipping sauce.

Blackened Tilapia with Secret Hobo Spices

The reviewer that said Emeril's Essence was similar is right, except Emeril's doesn't have celery seed. I used Emeril's Essence and made sandwiches with mayo and tomato. No liquid left in the pan. I loved it, but my husband thought the seasoning was a little too much and overpowered the tilapia.

Chicken Stew with Dumplings

Yum! I halved the recipe to feed 4, and used 3 cups chicken broth and 1 can cream of chicken. Added 1/4 tsp poultry seasoning, dash of cayenne & garlic powder. I also used 2 frozen chicken breasts cut up. Threw it all in my slow-cooker on high for 4 hours. Added the dumplings (also with a dash of cayenne and garlic powder) for the last 1/2 hour. It was really good! I don't think it could have been nearly as good using just water though.

Black Beans and Rice

Based on other reviews, I doubled the garlic and added a can of diced tomatoes with green chiles. I had to make this 2 nights in a row b/c my husband loved it so much. So easy and delicious!

Wow, this was great! I didn't have avocado or cilantro, so I just left them out. I also just used more corn instead of hominy. My husband and I both loved it! We'll be making this a lot!

Boilermaker Tailgate Chili

Wow, this makes a ton! It was a little too meaty for me, even with 2 extra cans of beans, but my husband (a boilermaker) loved it and i have had several recipe requests. We froze part of it and reheated it for chili dogs and chili dip, which turned out great.

Raspberry Banana Bread

This was a good alternative to plain banana bread, but I think I prefer it without the raspberries. I mixed them through, but they all seemed to congregate in the center of the bread, making one very raspberry bite.

Avocado, Tomato and Mango Salsa

Wow! I shortcut my way through the entire thing and it still tastes great! I used a can of diced tomatoes with green chiles, garlic from the jar, no avocado and lemon juice from a bottle. The only "fresh" ingredients I had were mango, parsely (in place of cilantro) and green onions (in place of red). Can't wait to try it with all of the correct fresh ingredients.
