Classic Waffles

These were great. I followed the recipe exactly. I DID NOT separate the eggs. They came out fluffy and full. I like my waffles to have some consistency. This is by far my favorite recipe.

WOW! I can not say enough about this soup. It is easy, low cost, and is delicious. My kids call it breakfast soup. I used part chicken broth and part water since I had some leftover and a bit of diced ham. However I did make it again following the recipe and it is still amazing. Don't be afraid of the poached eggs. It is well worth it.

Creamy Green Beans Parmesan

Excellent! The sauce is amazing and would be great on lots of other veggies and maybe even meat. The nutmeg is a must! DON'T LEAVE IT OUT.

Clark Gable Pancakes

These were great! The whole family loved them. Please do not listen to the other reviewers. The amount of baking powder IS CORRECT. It is what makes these pancakes so fluffy and tasty. All I want to know is why are they Clark Gable Pancakes?...

Super-Delicious Zuppa Toscana

I love this soup. This recipe is very simple to make and was a huge hit. You can fiddle with ingredients and it will still be tasty. I did use kale instead of spinach since I have never seen it served with spinach and I left out the bacon as well. I had it in a restaurant without bacon and thought it was better plus it is healthier. I do not eat pork so I did use turkey sausage. No one noticed. lol

Spiced Eggplant Indian Style

I have to say while I was making this it looked like it was going to be terrible. But boy was I wrong! This is amazing. I did top with a little feta so the kids would eat it, but the even without feta it was great!

Aunt Mary's Eggplant Balls

Pumpkin Cookies II

First of all these are more like muffins or moist bread than a cookie. Don't get me wrong they were great, but not what I was looking for. I was looking for a traditional cookie. However I ended up eating them at breakfast since the raisins and brown sugar are subtle and go well with coffee and the whole family enjoyed them. I will keep this recipe.

Southwestern Seafood Egg Rolls

These are absolutely wonderful! Don't be intimadated by the long list of ingredients, they are mostly spices. The combination of seafood and spice was perfect. They were not "fishy" at all. The use of phyllo dough and baking them makes these much healthier than regular egg rolls. The whole family loved them.

Crumb-Topped Salmon

Thsi was really ggod and top was nice and crispy. I did use panko crumbs instead and added a tiny bit of ramano cheese. I also cut out spraying the fish with oil and basted them with lemon juice. Was very well received!

Granny Kat's Pumpkin Roll

This tastes just like pumpkin pie with cream cheese frosting! AWSOME! It was easy to make and was a huge hit. It also looks great when sliced and stacked like the picture. They draw people towards them.

Potato Pizza

This was so easy to make and everyone loved it. I did squeeze the extra water out of the potatoes. The crust turned out very crisp. Not soggy at all. I did not put any tomato suace on the top. I layered everything like a pizzia. Will make again!

Baked Scallops

These were really soggy. I even cut the amount of butter and it still was soggy. I would suggest tossing the scallops with a tiny bit of olive oil before putting them in the pan instaed of using butter. Or maybe using this recipe to do a shake and bake type thing.

Ratatouille

This was the best thing I have ever tasted! I had no idea how good ratatoulle was. I used ramano instead of parmesan. Mine did not turn out soggy or too juicey. It was Perfect!
